Ingredients
- 2 onions
- 400 g stale ciabatta
- 1 l meat broth
- salt
- pepper (from the mill)
- nutmeg (freshly grated)
- thyme (for garnish)
Instructions
- 1. Peel the onions and slice them into thin rings.
- 2. Heat ghee (clarified butter) in a large pan.
- 3. Fry the onion rings until they are golden brown.
- 4. Cut the bread into small, bite-sized cubes.
- 5. Heat the broth in a pot.
- 6. Season the hot broth with salt, pepper, and a pinch of nutmeg.
- 7. Distribute the fried onions and bread cubes onto small bowls.
- 8. Pour the hot broth over the onions and bread.
- 9. Garnish the soup with fresh thyme and serve immediately.
