🍽️ Classic Onion Soup with Crispy Cheese Topping

Ingredients
- 600 g onions
- 2 tbsp sunflower oil
- 2 tsp sugar
- salt
- pepper (from a grinder)
- 800 ml meat broth
- 150 ml dry white wine
- 2 garlic cloves
- 1 tsp lemon juice
- 1 tsp fresh chopped thyme
- 4 slices baguette
- 80 g freshly grated Gruyère cheese
Instructions
- 1. Peel the onions and slice them into thin rings.
- 2. Heat the oil in a pot over medium heat.
- 3. Sauté the onions for about 10 to 15 minutes while stirring until they are soft.
- 4. Season the onions with sugar, salt, and pepper.
- 5. Let the onions cook for another 10 minutes, stirring occasionally, until they turn golden brown.
- 6. Pour in the broth and the wine and bring the mixture to a boil.
- 7. Let the soup simmer for about 20 minutes.
- 8. Peel the garlic and press it into the soup.
- 9. Season the soup with lemon juice, salt, pepper, and thyme.
- 10. Preheat the oven to 240°C on grill mode.
- 11. Sprinkle the bread slices with cheese.
- 12. Gratinate the cheese-topped bread slices briefly under the preheated grill.
- 13. Ladle the finished onion soup into 4 soup bowls.
- 14. Place a gratinated baguette slice on each bowl.
- 15. Serve the soup immediately.
