🍽️ Classic Creamy Onion Soup

Ingredients
- 500 g onions
- 4 tbsp butter
- 150 ml dry white wine
- 1 bay leaf
- 1 sprig sage
- 1 tsp peppercorns
- 3 allspice berries
- 3 juniper berries
- 750 ml poultry broth (or vegetable broth)
- 2 tbsp flour
- 150 ml whipping cream
- salt
- pepper (from the mill)
Instructions
- 1. Peel the onions and slice them into thin strips.
- 2. Heat 1 tablespoon of butter in a pot and sauté the onion strips until translucent.
- 3. Deglaze the mixture with the wine.
- 4. Fill a spice bag with the bay leaf, sage, pepper, allspice, and juniper berries.
- 5. Add the spice bag to the pot and pour in the broth.
- 6. Let the soup simmer on low heat for about 30 minutes.
- 7. Remove about one quarter of the onions from the soup and set them aside.
- 8. Strain the soup through a fine sieve into a clean pot.
- 9. Remove the spice bag from the soup.
- 10. Melt 1 tablespoon of butter in a clean pot.
- 11. Stir the flour into the melted butter.
- 12. Slowly pour in the strained soup while stirring.
- 13. Add the cream and let the soup simmer gently for about 10 minutes.
- 14. Thin the soup with a little more broth if necessary.
- 15. Season the soup to taste with salt and pepper.
- 16. Remove the pot from the heat and blend the remaining butter into the soup until frothy.
- 17. Distribute the reserved onions onto the soup bowls.
- 18. Pour the hot soup over the onions and serve immediately.
