  1. 1. Peel the onions and slice them into thin strips.
  2. 2. Heat 1 tablespoon of butter in a pot and sauté the onion strips until translucent.
  3. 3. Deglaze the mixture with the wine.
  4. 4. Fill a spice bag with the bay leaf, sage, pepper, allspice, and juniper berries.
  5. 5. Add the spice bag to the pot and pour in the broth.
  6. 6. Let the soup simmer on low heat for about 30 minutes.
  7. 7. Remove about one quarter of the onions from the soup and set them aside.
  8. 8. Strain the soup through a fine sieve into a clean pot.
  9. 9. Remove the spice bag from the soup.
  10. 10. Melt 1 tablespoon of butter in a clean pot.
  11. 11. Stir the flour into the melted butter.
  12. 12. Slowly pour in the strained soup while stirring.
  13. 13. Add the cream and let the soup simmer gently for about 10 minutes.
  14. 14. Thin the soup with a little more broth if necessary.
  15. 15. Season the soup to taste with salt and pepper.
  16. 16. Remove the pot from the heat and blend the remaining butter into the soup until frothy.
  17. 17. Distribute the reserved onions onto the soup bowls.
  18. 18. Pour the hot soup over the onions and serve immediately.
