🍽️ Onion Skewers with Sour Potatoes

Ingredients
- 1 kg waxy potatoes
- 20 small onions
- 16 sage leaves
- 40 g butter
- 2 sour pickling cucumbers
- 200 g sour cream
- 3 tbsp apple cider vinegar
- 2 tbsp chopped parsley
- Salt (pepper)
Instructions
- 1. Peel the potatoes and wash them thoroughly.
- 2. Cut the potatoes into slices about 2 cm thick.
- 3. Bring 1/4 liter of salted water to a boil in a pot.
- 4. Add the potato slices to the boiling water.
- 5. Cover the pot and cook the potatoes on low heat for 20 minutes.
- 6. While the potatoes are cooking, peel the onions.
- 7. Wash the sage leaves and pat them dry with a kitchen towel.
- 8. Thread the potato slices, onion pieces, and sage leaves alternately onto 4 wooden skewers.
- 9. Heat half of the butter in a frying pan.
- 10. Place the onion skewers in the hot butter.
- 11. Fry the skewers on low heat for 10 minutes.
- 12. Turn the skewers frequently so they brown evenly.
- 13. Wash the cucumbers thoroughly.
- 14. Dice the cucumbers into small cubes.
- 15. Drain the cooked potatoes and let them sit for a moment.
- 16. Heat the remaining butter in a pot or frying pan.
- 17. Stir the vinegar and crème fraîche into the warm butter.
- 18. Add the cucumber cubes and the potatoes to the sauce.
- 19. Season the potato mixture with salt and pepper to taste.
- 20. Divide the warm potato mixture among the plates.
- 21. Place the fried onion skewers on top of the potato mixture.
- 22. Garnish the dish with freshly chopped parsley.
