  2. 2. Cut the onions and the garlic into thin strips.
  3. 3. Rinse the meat under running water.
  4. 4. Pat the meat dry with a kitchen towel.
  5. 5. Cut the meat into cubes of about 4 centimeters.
  6. 6. Place the meat cubes in a bowl.
  7. 7. Season the meat with cumin, paprika powder, salt, and pepper.
  8. 8. Add some flour.
  9. 9. Mix everything well so that the meat is evenly seasoned.
  10. 10. Heat oil in a large pot.
  11. 11. Fry the meat cubes in batches over high heat.
  12. 12. Remove the browned meat from the pot and set it aside.
  13. 13. Add the sliced onions and garlic to the remaining fat in the pot.
  14. 14. Sauté the vegetables briefly.
  15. 15. Sprinkle sugar over the onion mixture.
  16. 16. Caramelize the vegetables until they are light brown.
  17. 17. Stir tomato paste into the pan.
  18. 18. Deglaze the mixture with a splash of white wine.
  19. 19. Add white wine and vegetable stock to the pot.
  20. 20. Place the prepared meat back into the pot.
  21. 21. Peel the potatoes.
  22. 22. Grate the potatoes finely.
  23. 23. Add the grated potatoes to the meat.
  24. 24. Stir everything well.
  25. 25. Cover the pot.
  26. 26. Let the goulash simmer for about 1.5 hours.
  27. 27. Stir the dish occasionally during the cooking time.
  28. 28. Add the sauerkraut to the goulash.
  29. 29. Let the dish simmer for another 5 minutes.
  30. 30. Add marjoram leaves.
  31. 31. Season the ragout with salt, pepper, and cayenne pepper.
  32. 32. Stir sour cream and chives until smooth.
  33. 33. Serve the goulash with the sour cream and fresh marjoram.
  34. 34. Serve mashed potatoes on the side if you like.
