🍽️ Hearty Onion Goulash with Peppers and Sauerkraut

Ingredients
- 1.5 kg Pork shoulder (without rind)
- 4 Onions
- 1 Garlic clove
- 1 tsp Cumin (ground)
- 1 tbsp Paprika powder
- 1 tbsp Flour
- 6 tbsp Oil
- Sugar
- 2 tbsp Tomato paste
- 500 ml White wine
- 750 ml Meat broth
- 200 g Potatoes (waxy)
- 300 g Sauerkraut (can)
- 2 tbsp Marjoram (chopped)
- 2 tbsp Chives
- 4 tbsp Sour cream
- Salt
- Pepper (from the mill)
- Cayenne pepper
- Marjoram sprig (for garnish)
Instructions
- 1. Peel the onions and the garlic.
- 2. Cut the onions and the garlic into thin strips.
- 3. Rinse the meat under running water.
- 4. Pat the meat dry with a kitchen towel.
- 5. Cut the meat into cubes of about 4 centimeters.
- 6. Place the meat cubes in a bowl.
- 7. Season the meat with cumin, paprika powder, salt, and pepper.
- 8. Add some flour.
- 9. Mix everything well so that the meat is evenly seasoned.
- 10. Heat oil in a large pot.
- 11. Fry the meat cubes in batches over high heat.
- 12. Remove the browned meat from the pot and set it aside.
- 13. Add the sliced onions and garlic to the remaining fat in the pot.
- 14. Sauté the vegetables briefly.
- 15. Sprinkle sugar over the onion mixture.
- 16. Caramelize the vegetables until they are light brown.
- 17. Stir tomato paste into the pan.
- 18. Deglaze the mixture with a splash of white wine.
- 19. Add white wine and vegetable stock to the pot.
- 20. Place the prepared meat back into the pot.
- 21. Peel the potatoes.
- 22. Grate the potatoes finely.
- 23. Add the grated potatoes to the meat.
- 24. Stir everything well.
- 25. Cover the pot.
- 26. Let the goulash simmer for about 1.5 hours.
- 27. Stir the dish occasionally during the cooking time.
- 28. Add the sauerkraut to the goulash.
- 29. Let the dish simmer for another 5 minutes.
- 30. Add marjoram leaves.
- 31. Season the ragout with salt, pepper, and cayenne pepper.
- 32. Stir sour cream and chives until smooth.
- 33. Serve the goulash with the sour cream and fresh marjoram.
- 34. Serve mashed potatoes on the side if you like.
