  1. 1. Knead flour, butter, egg, and salt into a smooth dough. Shape into a ball, wrap in plastic wrap, and let rest in the refrigerator for about 30 minutes. For the filling, dice the onions and bacon finely. Drain and squeeze well in a kitchen towel.
  2. 2. For the egg mixture, whisk cream, milk, eggs, nutmeg, and salt well with a mixer.
  3. 3. Roll out the dough thinly on a floured surface. Line a greased round baking pan with the dough and pre-bake for 10 minutes in the preheated oven (220°).
  4. 4. Remove the pan from the oven and reduce the temperature to 180 °C. Leave the dough in the pan and evenly distribute the onions, bacon, and cheese on top. Pour the egg mixture over it.
  5. 5. Bake the quiche on the lower rack for about 35 minutes until golden brown.
