  1. 1. Preheat the oven to 200 degrees Celsius.
  2. 2. Grease a baking dish with some fat.
  3. 3. Bring water to a boil in a pot and add salt.
  4. 4. Peel the onions.
  5. 5. Cook the onions in the boiling salted water for 5 to 8 minutes.
  6. 6. The onions should be tender but still firm enough not to fall apart.
  7. 7. Remove the onions from the water and rinse them briefly with cold water.
  8. 8. Cut each onion from the root end up to the halfway point.
  9. 9. Remove about two-thirds of the inner onion material and set it aside.
  10. 10. Trim the bottom of the onions slightly so they stand stably.
  11. 11. Place the onions in the prepared baking dish.
  12. 12. Season the inside of the onions carefully with salt and pepper.
  13. 13. Heat a pan and fry the finely diced bacon until crispy.
  14. 14. Remove the bacon from the pan and set it aside.
  15. 15. Finely dice the reserved onion interior.
  16. 16. Mix the bacon cubes, onion cubes, and the remaining ingredients for the filling.
  17. 17. Season the filling strongly to taste.
  18. 18. The filling should form a solid mass but not be liquid.
  19. 19. If the mixture is too moist, add some more breadcrumbs.
  20. 20. Fill the onions with the prepared mixture.
  21. 21. Bake the stuffed onions in the oven for about 15 minutes.
  22. 22. The onions are ready when they are golden brown on top.
