🍽️ Crispy Onion Tart with Thyme

Ingredients
- 200 g onions (4 onions)
- 200 g red onion (4 red onions)
- 200 g shallots (8 shallots)
- 3 tbsp olive oil
- salt
- 4 sprigs thyme
- 200 g spelt whole wheat flour
- 200 g wheat flour Type 1050
- 1 packet baking powder
- 1 pinch sugar
- 200 g low-fat quark
- 8 tbsp milk (1,5 % fat)
- 6 tbsp rapeseed oil
- 60 g sour cream (3 tbsp)
- pepper
- 1 tbsp liquid honey
- 1 tsp paprika powder (rose spicy)
Instructions
- 1. Peel the onions and shallots.
- 2. Cut the vegetables into thin rings.
- 3. Heat the olive oil in a non-stick pan.
- 4. Add the onion rings and shallots to the pan.
- 5. Season the onions with a pinch of salt.
- 6. Sauté the vegetables until soft over medium heat.
- 7. Cook the onions for about 8 to 10 minutes.
- 8. Wash the fresh thyme under running water.
- 9. Shake the herbs dry.
- 10. Pluck the small thyme leaves from the stems.
- 11. Chop the thyme leaves roughly.
- 12. Stir the thyme into the warm onion mixture.
- 13. Remove the pan from the heat.
- 14. Set the onion mixture aside.
- 15. Add both types of flour to a large mixing bowl.
- 16. Add the baking powder.
- 17. Season the flour mixture with half a teaspoon of salt.
- 18. Add a pinch of sugar.
- 19. Mix the dry ingredients well.
- 20. Add the quark to the bowl.
- 21. Pour in the milk.
- 22. Add the rapeseed oil.
- 23. Process the ingredients with a hand mixer.
- 24. Knead the dough until it is smooth.
- 25. Line a baking tray with baking paper.
- 26. Roll out the dough on the tray.
- 27. Spread the crème fraîche evenly over the dough.
- 28. Use a rubber spatula for this.
- 29. Season the crème fraîche with salt and pepper.
- 30. Distribute the onion mixture over the dough.
- 31. Leave a small border around the edge.
- 32. Drizzle honey over the onions.
- 33. Sprinkle paprika powder over it.
- 34. Preheat the oven to 220 degrees Celsius.
- 35. Use convection at 200 degrees or gas level 3 to 4.
- 36. Place the tray on the middle rack.
- 37. Bake the tart for 20 to 25 minutes.
- 38. Cut the finished onion tart into 8 pieces.
- 39. Serve the tart warm.
