  2. 2. Cut the vegetables into thin rings.
  3. 3. Heat the olive oil in a non-stick pan.
  4. 4. Add the onion rings and shallots to the pan.
  5. 5. Season the onions with a pinch of salt.
  6. 6. Sauté the vegetables until soft over medium heat.
  7. 7. Cook the onions for about 8 to 10 minutes.
  8. 8. Wash the fresh thyme under running water.
  9. 9. Shake the herbs dry.
  10. 10. Pluck the small thyme leaves from the stems.
  11. 11. Chop the thyme leaves roughly.
  12. 12. Stir the thyme into the warm onion mixture.
  13. 13. Remove the pan from the heat.
  14. 14. Set the onion mixture aside.
  15. 15. Add both types of flour to a large mixing bowl.
  16. 16. Add the baking powder.
  17. 17. Season the flour mixture with half a teaspoon of salt.
  18. 18. Add a pinch of sugar.
  19. 19. Mix the dry ingredients well.
  20. 20. Add the quark to the bowl.
  21. 21. Pour in the milk.
  22. 22. Add the rapeseed oil.
  23. 23. Process the ingredients with a hand mixer.
  24. 24. Knead the dough until it is smooth.

  26. 26. Roll out the dough on the tray.
  27. 27. Spread the crème fraîche evenly over the dough.
  28. 28. Use a rubber spatula for this.
  29. 29. Season the crème fraîche with salt and pepper.
  30. 30. Distribute the onion mixture over the dough.
  31. 31. Leave a small border around the edge.
  32. 32. Drizzle honey over the onions.
  33. 33. Sprinkle paprika powder over it.
  34. 34. Preheat the oven to 220 degrees Celsius.
  35. 35. Use convection at 200 degrees or gas level 3 to 4.
  36. 36. Place the tray on the middle rack.
  37. 37. Bake the tart for 20 to 25 minutes.
  38. 38. Cut the finished onion tart into 8 pieces.
  39. 39. Serve the tart warm.
