🍽️ Onion Pie with Clams

Ingredients
- 150 g flour
- 150 g quark
- 150 g soft butter
- 1 pinch salt
- 500 g onions
- 400 g tomatoes
- 200 g cooked, shelled mussels (fresh or jarred)
- 2 tbsp butter
- salt
- pepper (from the mill)
- 1 tsp dried marjoram
- 3 eggs
- 150 g crème fraîche
- 150 g whipping cream
- 75 g freshly grated Gruyère cheese
Instructions
- 1. Process flour, quark, butter, and salt with the dough hooks of a hand mixer until you have a smooth dough, then cover and refrigerate for 30 minutes.
- 2. Peel the onions and slice them into rings. Briefly blanch the tomatoes, let them cool, peel them, quarter them, remove the cores, and chop them finely.
- 3. Sauté the onions in hot butter in a large pan until translucent, then add the tomatoes and cook for another 3 to 4 minutes. Finally, stir in the mussels and season with salt, pepper, and marjoram. Remove the pan from the heat.
- 4. Whisk the eggs well with the crème fraîche, cream, and grated Gruyère.
- 5. Roll out the dough on a lightly floured work surface and line the greased baking pan with it, forming a crust edge. Distribute the onion mixture evenly over the dough and pour the egg-cream mixture over it. Bake in a preheated oven (200°; center) for about 30 minutes.
