  1. 1. Process flour, quark, butter, and salt with the dough hooks of a hand mixer until you have a smooth dough, then cover and refrigerate for 30 minutes.
  2. 2. Peel the onions and slice them into rings. Briefly blanch the tomatoes, let them cool, peel them, quarter them, remove the cores, and chop them finely.
  3. 3. Sauté the onions in hot butter in a large pan until translucent, then add the tomatoes and cook for another 3 to 4 minutes. Finally, stir in the mussels and season with salt, pepper, and marjoram. Remove the pan from the heat.
  4. 4. Whisk the eggs well with the crème fraîche, cream, and grated Gruyère.
  5. 5. Roll out the dough on a lightly floured work surface and line the greased baking pan with it, forming a crust edge. Distribute the onion mixture evenly over the dough and pour the egg-cream mixture over it. Bake in a preheated oven (200°; center) for about 30 minutes.
