🍽️ Classic Onion Pie

Ingredients
- 500 g spelt flour
- salt
- 20 g yeast (1/2 cube)
- 250 ml lukewarm milk (3.5% fat)
- 60 g butter
- 1 kg onions
- 150 g bacon
- 3 eggs
- 250 g sour cream
- pepper
- 1 tsp caraway seeds
Instructions
- 1. Mix flour and salt in a large bowl.
- 2. Make a well in the center of the flour mixture.
- 3. Crumble the yeast into the well.
- 4. Mix the yeast with half of the milk.
- 5. Let the dough rest covered for 20 minutes.
- 6. Melt the butter in the remaining milk.
- 7. Add the butter milk to the dough.
- 8. Stir everything until the dough pulls away from the sides of the bowl.
- 9. Let the dough rise covered for 1 hour.
- 10. Peel the onions and slice them into rings.
- 11. Cut the bacon into small cubes.
- 12. Fry the bacon in a hot pan over medium heat.
- 13. Add the onion rings to the pan.
- 14. Sauté the onions until they are translucent.
- 15. Let the onion and bacon mixture cool down.
- 16. Whisk the eggs with the sour cream.
- 17. Season the egg mixture with salt, pepper, and caraway seeds.
- 18. Fold the cooled onions into the egg mixture.
- 19. Roll out the dough.
- 20. Line a baking sheet with baking paper.
- 21. Place the dough on the tray.
- 22. Form a small edge on the dough.
- 23. Distribute the filling evenly over the dough.
- 24. Preheat the oven to 200 °C (convection 180 °C or gas mark 3).
- 25. Bake the pie for about 35 to 40 minutes until golden brown.
