🍽️ Classic Onion Tart

Ingredients
- 500 g spelt flour
- salt
- 20 g yeast (1/2 cube)
- 250 ml lukewarm milk (3.5% fat)
- 60 g butter
- 1 kg onions
- 150 g bacon
- 3 eggs
- 250 g sour cream
- pepper
- 1 tsp caraway seeds
Instructions
- 1. Mix the flour with the salt in a large bowl.
- 2. Make a well in the center of the flour mixture.
- 3. Crumble the yeast into the well.
- 4. Stir the yeast with half of the milk.
- 5. Let the mixture rise under a cloth for 20 minutes.
- 6. Melt the butter in the remaining milk.
- 7. Add the buttermilk to the dough.
- 8. Stir until the dough pulls away from the bottom of the bowl.
- 9. Let the dough rise under a cloth for 1 hour.
- 10. Peel the onions.
- 11. Cut the onions into thin strips.
- 12. Dice the bacon.
- 13. Fry the bacon in a hot pan over medium heat.
- 14. Add the onions.
- 15. Sauté the onions until translucent.
- 16. Let the onion and bacon mixture cool down.
- 17. Whisk the eggs with the sour cream.
- 18. Season the egg mixture with salt, pepper, and caraway seeds.
- 19. Fold the cooled onions into the egg mixture.
- 20. Roll out the dough.
- 21. Line a baking sheet with baking paper.
- 22. Place the dough on the sheet.
- 23. Form a small edge on the dough.
- 24. Spread the bacon and onion mixture over the dough.
- 25. Preheat the oven to 200 degrees (convection 180 degrees or gas mark 3).
- 26. Bake the tart for about 35 to 40 minutes until golden brown.
