🍽️ Hearty Onion and Potato Stew with Sausages

Ingredients
- 600 g vegetable onions
- 300 g potatoes
- 300 g carrots
- 3 tbsp oil
- 1 l vegetable broth
- 1 bay leaf
- 2 tsp caraway seeds
- 4 small frying sausages (e.g. Nuremberg roast sausages)
- 1 tbsp chopped flat-leaf parsley
- salt
- pepper from the mill
- 50 g fresh horseradish root
Instructions
- 1. Peel the onions and cut them in half.
- 2. Slice the onion halves into thin strips.
- 3. Peel the potatoes and cut them into small cubes.
- 4. Peel the carrots and slice them into rounds.
- 5. Heat two tablespoons of oil in a large pot.
- 6. Add the onions, potatoes, and carrots to the hot oil.
- 7. Sauté the vegetables for a few minutes until they start to soften.
- 8. Deglaze the vegetables with the vegetable broth.
- 9. Add the bay leaves and cumin seeds to the pot.
- 10. Simmer the stew over medium heat for 15 to 20 minutes.
- 11. Heat the remaining oil in a separate frying pan.
- 12. Fry the sausages in the pan for 5 to 7 minutes until golden brown.
- 13. Peel the fresh horseradish and grate it finely.
- 14. Season the stew to taste with salt and pepper.
- 15. Stir the chopped parsley into the stew.
- 16. Cut the fried sausages into bite-sized pieces.
- 17. Add the sausage pieces to the stew and warm them through.
- 18. Serve the stew hot with the grated horseradish on the side.
