🍰 Crispy Onion and Bacon Pie

Ingredients
- 350 g flour
- 1 cube yeast (42 g)
- 200 ml lukewarm milk
- 1 tsp salt
- flour (for working)
- 1.5 kg onions
- 2 tbsp butter
- 200 g sour cream
- 200 g crème fraîche
- 4 eggs
- salt
- pepper
- 0.5 tsp caraway seeds
- 60 g bacon cubes
Instructions
- 1. Place the flour in a large bowl.
- 2. Dissolve the yeast in the milk.
- 3. Add the milk-yeast mixture and the salt to the flour.
- 4. Knead everything into a smooth dough using the dough hooks of the mixer.
- 5. If necessary, add a little more flour or lukewarm milk until the consistency is correct.
- 6. Cover the dough.
- 7. Let the dough rise for about 1 hour in a warm place.
- 8. Peel the onions.
- 9. Slice the onions into thin rings.
- 10. Heat the butter in a large pan.
- 11. Sauté the onion rings in the hot butter for about 5 minutes until soft.
- 12. Remove the pan from the heat.
- 13. Let the onions cool down slightly.
- 14. Preheat the oven to 200°C (top and bottom heat).
- 15. Line a baking tray with parchment paper.
- 16. Dust a work surface with flour.
- 17. Roll out the dough on the floured surface.
- 18. Ensure the dough is large enough to fit the baking tray.
- 19. Place the dough on the prepared tray.
- 20. Press the dough down firmly.
- 21. Form a border from the dough.
- 22. Distribute the cooled onions evenly over the dough.
- 23. Mix the sour cream with the crème fraîche.
- 24. Add the eggs, salt, pepper, and caraway seeds to the cream mixture.
- 25. Fold in the bacon cubes into the mixture.
- 26. Pour the egg-cream mixture over the onions.
- 27. Bake the pie for about 1 hour until golden brown.
