  1. 1. Peel the onions and cut them into wedges.
  2. 2. Peel the ginger and grate it finely.
  3. 3. Add the onions, grated ginger, peppercorns, bay leaf, vinegar, and sugar to a pot.
  4. 4. Bring the mixture to a boil.
  5. 5. Simmer it gently for about 5 minutes.
  6. 6. Add a little water if necessary.
  7. 7. Wash the rhubarb and remove any tough fibers.
  8. 8. Cut the rhubarb into pieces about 1 cm in size.
  9. 9. Add the rhubarb pieces to the spiced mixture in the pot.
  10. 10. Let everything simmer for about 15 minutes, stirring occasionally.
  11. 11. Season the chutney with salt and pepper to taste.
  12. 12. Fill the chutney into jars.
  13. 13. Seal the jars well and let them cool down.
