🍽️ Onion Rhubarb Chutney

Ingredients
- 2 red onions
- 30 g ginger
- 1 tbsp green peppercorns
- 1 bay leaf
- 50 ml apple cider vinegar
- 80 g brown sugar
- 500 g rhubarb
- salt
- pepper (from the mill)
Instructions
- 1. Peel the onions and cut them into wedges.
- 2. Peel the ginger and grate it finely.
- 3. Add the onions, grated ginger, peppercorns, bay leaf, vinegar, and sugar to a pot.
- 4. Bring the mixture to a boil.
- 5. Simmer it gently for about 5 minutes.
- 6. Add a little water if necessary.
- 7. Wash the rhubarb and remove any tough fibers.
- 8. Cut the rhubarb into pieces about 1 cm in size.
- 9. Add the rhubarb pieces to the spiced mixture in the pot.
- 10. Let everything simmer for about 15 minutes, stirring occasionally.
- 11. Season the chutney with salt and pepper to taste.
- 12. Fill the chutney into jars.
- 13. Seal the jars well and let them cool down.
