🍕 Crispy Pizza with Onions, Peppers, and Arugula

Ingredients
- 3 Onions
- 2 red Bell Peppers
- 2 Handfuls Arugula
- 2 tbsp Butter
- Pepper (from the mill)
- 140 g grated Emmental
- 50 g shaved Parmesan
Instructions
- 1. Mix the flour with one teaspoon of salt in a large bowl.
- 2. Create a well in the center of the flour mixture.
- 3. Dissolve the yeast and sugar in 200 milliliters of lukewarm water.
- 4. Pour the yeast solution along with the olive oil into the flour well.
- 5. Work the flour in from the center until it is combined with the liquid.
- 6. Knead the dough until it is smooth, elastic, and releases from the bowl.
- 7. Let the dough rest covered in a warm place for about 60 minutes until it doubles in size.
- 8. Peel the onions and slice them into thin strips.
- 9. Wash the peppers thoroughly and remove the core.
- 10. Cut the peppers into thin strips as well.
- 11. Wash the arugula and let it drain well.
- 12. Heat the butter in a large pan.
- 13. Sauté the onions and peppers for about 10 minutes, stirring occasionally.
- 14. Season the vegetable mixture with salt and pepper.
- 15. Preheat the oven to 210 degrees Celsius with top and bottom heat.
- 16. Divide the dough into four equal portions.
- 17. Dust a work surface with flour and roll each portion into a circle.
- 18. Place the dough circles on a baking sheet greased with oil.
- 19. Sprinkle the dough circles with Emmental cheese.
- 20. Distribute the sautéed onion-pepper mixture evenly on top.
- 21. Bake the pizzas for about 20 minutes in the preheated oven.
- 22. Top the finished pizzas with arugula and Parmesan.
