  1. 1. Mix the flour with one teaspoon of salt in a large bowl.
  2. 2. Create a well in the center of the flour mixture.
  3. 3. Dissolve the yeast and sugar in 200 milliliters of lukewarm water.
  4. 4. Pour the yeast solution along with the olive oil into the flour well.
  5. 5. Work the flour in from the center until it is combined with the liquid.
  6. 6. Knead the dough until it is smooth, elastic, and releases from the bowl.
  7. 7. Let the dough rest covered in a warm place for about 60 minutes until it doubles in size.
  8. 8. Peel the onions and slice them into thin strips.
  9. 9. Wash the peppers thoroughly and remove the core.
  10. 10. Cut the peppers into thin strips as well.
  11. 11. Wash the arugula and let it drain well.
  12. 12. Heat the butter in a large pan.
  13. 13. Sauté the onions and peppers for about 10 minutes, stirring occasionally.
  14. 14. Season the vegetable mixture with salt and pepper.
  15. 15. Preheat the oven to 210 degrees Celsius with top and bottom heat.
  16. 16. Divide the dough into four equal portions.
  17. 17. Dust a work surface with flour and roll each portion into a circle.
  18. 18. Place the dough circles on a baking sheet greased with oil.
  19. 19. Sprinkle the dough circles with Emmental cheese.
  20. 20. Distribute the sautéed onion-pepper mixture evenly on top.
  21. 21. Bake the pizzas for about 20 minutes in the preheated oven.
  22. 22. Top the finished pizzas with arugula and Parmesan.
