  1. 1. Peel the onions and cut them lengthwise into thin wedges.
  2. 2. Peel the shallot and dice it very finely.
  3. 3. Heat two tablespoons of butter in a pan.
  4. 4. Add the diced shallot to the hot butter and sweat it briefly.
  5. 5. Add the onion wedges to the shallot in the pan.
  6. 6. Drizzle balsamic vinegar over the onions.
  7. 7. Simmer the onions for about five minutes, shaking the pan occasionally.
  8. 8. Season the onions with salt and pepper.
  9. 9. Allow all the liquid to evaporate completely.
  10. 10. Whisk the eggs together with the milk in a separate bowl.
  11. 11. Season the egg mixture with salt, pepper, and a pinch of ground nutmeg.
  12. 12. Heat one tablespoon of butter in a small pan.
  13. 13. Pour about one-eighth of the egg mixture into the hot pan.
  14. 14. Place some of the prepared onion wedges on top of the liquid egg mixture.
  15. 15. Let the omelet set for two to four minutes until it is firm.
  16. 16. Repeat the process to bake three more omelets from the remaining egg mixture.
  17. 17. Keep the finished omelets warm in the oven at 80 degrees Celsius if needed.
  18. 18. Garnish the omelets with fresh herbs and serve.
