🍽️ Crispy Onion Omelettes

Ingredients
- 4 red onions
- 1 shallot
- 6 tbsp butter
- 2 tbsp balsamic vinegar
- salt
- pepper (from the mill)
- 8 eggs
- 4 tbsp milk
- nutmeg (freshly grated)
Instructions
- 1. Peel the onions and cut them lengthwise into thin wedges.
- 2. Peel the shallot and dice it very finely.
- 3. Heat two tablespoons of butter in a pan.
- 4. Add the diced shallot to the hot butter and sweat it briefly.
- 5. Add the onion wedges to the shallot in the pan.
- 6. Drizzle balsamic vinegar over the onions.
- 7. Simmer the onions for about five minutes, shaking the pan occasionally.
- 8. Season the onions with salt and pepper.
- 9. Allow all the liquid to evaporate completely.
- 10. Whisk the eggs together with the milk in a separate bowl.
- 11. Season the egg mixture with salt, pepper, and a pinch of ground nutmeg.
- 12. Heat one tablespoon of butter in a small pan.
- 13. Pour about one-eighth of the egg mixture into the hot pan.
- 14. Place some of the prepared onion wedges on top of the liquid egg mixture.
- 15. Let the omelet set for two to four minutes until it is firm.
- 16. Repeat the process to bake three more omelets from the remaining egg mixture.
- 17. Keep the finished omelets warm in the oven at 80 degrees Celsius if needed.
- 18. Garnish the omelets with fresh herbs and serve.
