🍰 Savory Onion and Apple Cake

Ingredients
- 150 g flour
- 150 g quark
- 150 g soft butter
- 1 pinch salt
- 500 g onions
- 500 g apples
- 2 tbsp lemon juice
- 125 g breakfast bacon
- 2 tbsp butter
- salt
- pepper (from the mill)
- 1 tsp dried marjoram
- 2 eggs
- 150 g crème fraîche
- 100 g whipping cream
- 75 g freshly grated Gruyère cheese
Instructions
- 1. Put flour, quark (a type of fresh cheese), butter, and salt into a bowl.
- 2. Knead the dough with the beaters of an electric hand mixer until it is smooth and elastic.
- 3. Cover the dough and place it in the refrigerator for 30 minutes.
- 4. Peel the onions and cut them into small cubes.
- 5. Peel the apples, cut them into quarters, and remove the core.
- 6. Cut the apple pieces into small cubes.
- 7. Immediately drizzle the apple pieces with lemon juice and mix them well.
- 8. Cut the breakfast bacon into small cubes.
- 9. Fry the bacon in hot butter in a frying pan.
- 10. Add the onion cubes and sweat them until they are translucent.
- 11. Add the apple pieces and simmer everything for another 3 to 4 minutes.
- 12. Season the mixture with salt, pepper, and marjoram.
- 13. Remove the pan from the heat.
- 14. Whisk the eggs with crème fraîche, cream, and grated Gruyère cheese.
- 15. Preheat the oven to 200 degrees Celsius (conventional or fan-assisted).
- 16. Roll out the dough on a lightly floured work surface.
- 17. Grease the baking pan and line it with the dough.
- 18. Pull up a crust edge from the dough.
- 19. Spread the apple-onion mixture evenly over the dough.
- 20. Pour the egg-cream mixture over the topping.
- 21. Bake the cake in the preheated oven on the middle rack for approx. 30 minutes.
