  1. 1. Rinse three jam jars (400 milliliters each) with boiling water.
  2. 2. Place the jars upside down on a clean kitchen towel to drain and dry.
  3. 3. Wash the plums thoroughly.
  4. 4. Halve the plums and remove the pits.
  5. 5. Cut the fruit flesh into small cubes.
  6. 6. Peel the ginger.
  7. 7. Finely chop the ginger.
  8. 8. Break the star anise pods in half.
  9. 9. Place the plum pieces and ginger into a pot.
  10. 10. Add the remaining ingredients and 75 milliliters of water.
  11. 11. Stir the mixture well.
  12. 12. Bring the mixture to a boil while stirring constantly.
  13. 13. Simmer the sauce over medium heat for four minutes.
  14. 14. Stir occasionally while cooking.
  15. 15. Pour the hot sauce through a fine sieve into a second pot.
  16. 16. Press the plum residue through the sieve using the back of a spoon or ladle to extract all flavors.
  17. 17. Bring the smooth sauce in the second pot back to a boil.
  18. 18. Season the sauce to taste with a pinch of salt.
  19. 19. Fill the hot sauce immediately into the prepared, warm jars.
  20. 20. Seal the jars tightly with the lids.
  21. 21. Place the sealed jars upside down for five minutes.
  22. 22. Then place the jars upright on the work surface.
