  2. 2. Halve the plums and remove the pits.
  3. 3. Cut the fruit halves into quarters lengthwise.
  4. 4. Squeeze the lemon.
  5. 5. Add the lemon juice and coconut blossom sugar to the plums.
  6. 6. Mix everything well together.
  7. 7. Let the mixture sit for at least one hour.
  8. 8. Heat water in a pot.
  9. 9. Place the jars in the hot water.
  10. 10. Boil the jars for ten minutes.
  11. 11. Bring the plum mixture to a boil slowly while stirring.
  12. 12. Add the agar-agar.
  13. 13. Boil the jam vigorously for five minutes.
  14. 14. Drop some jam onto a cold plate.
  15. 15. Let the sample cool down.
  16. 16. Check if the jam sets firmly.
  17. 17. Fill the hot jars to the brim with the jam.
  18. 18. Seal the jars tightly.
  19. 19. Place the jars upside down for ten minutes.
  20. 20. Turn the jars back over.
  21. 21. Let the jam cool down completely.
