  1. 1. Combine 250 grams of spelt flour, almond flour, baking powder, 75 grams of maple syrup, a pinch of salt, 150 grams of butter cut into pieces, and one egg. Quickly knead the ingredients into a smooth dough.
  2. 2. Wrap the dough in plastic wrap and place it in the refrigerator for 1 hour.
  3. 3. Wash the plums thoroughly. Cut them in half and remove the pits.
  4. 4. Carefully sprinkle the plum halves with cinnamon powder and mix them well.
  5. 5. Take the remaining spelt flour, maple syrup, butter, and ground hazelnut kernels. Process these ingredients by hand to form crumbles.
  6. 6. Set the finished crumbles aside.
  7. 7. Take the dough out of the refrigerator and roll it out.
  8. 8. Place the dough in a springform pan and form a crust edge.
  9. 9. Sprinkle the dough base with breadcrumbs.
  10. 10. Prick the base several times with a fork.
  11. 11. Arrange the plum halves in a brick-like pattern on the dough base.
  12. 12. Sprinkle the prepared crumbles evenly over the plums.
  13. 13. Preheat the oven. Set the temperature to 180 °C (convection 160 °C; gas: setting 2–3).
  14. 14. Place the pan on the middle rack.
  15. 15. Bake the cake for 35 to 40 minutes.
  16. 16. Take the cake out of the oven.
