🍰 Juicy Plum Crumble Cake

Ingredients
- 300 g spelt flour (Type 1050)
- 50 g almond flour
- 1 tsp baking powder
- 125 g maple syrup
- 1 pinch salt
- 200 g butter
- 1 egg
- 30 g whole wheat breadcrumbs
- 1000 g plums
- 1 level tsp cinnamon powder
- 50 g ground hazelnuts
Instructions
- 1. Combine 250 grams of spelt flour, almond flour, baking powder, 75 grams of maple syrup, a pinch of salt, 150 grams of butter cut into pieces, and one egg. Quickly knead the ingredients into a smooth dough.
- 2. Wrap the dough in plastic wrap and place it in the refrigerator for 1 hour.
- 3. Wash the plums thoroughly. Cut them in half and remove the pits.
- 4. Carefully sprinkle the plum halves with cinnamon powder and mix them well.
- 5. Take the remaining spelt flour, maple syrup, butter, and ground hazelnut kernels. Process these ingredients by hand to form crumbles.
- 6. Set the finished crumbles aside.
- 7. Take the dough out of the refrigerator and roll it out.
- 8. Place the dough in a springform pan and form a crust edge.
- 9. Sprinkle the dough base with breadcrumbs.
- 10. Prick the base several times with a fork.
- 11. Arrange the plum halves in a brick-like pattern on the dough base.
- 12. Sprinkle the prepared crumbles evenly over the plums.
- 13. Preheat the oven. Set the temperature to 180 °C (convection 160 °C; gas: setting 2–3).
- 14. Place the pan on the middle rack.
- 15. Bake the cake for 35 to 40 minutes.
- 16. Take the cake out of the oven.
- 17. Let the cake cool down completely.
