🍰 Juicy Plum Cake with Yeast Dough

Ingredients
- 200 g flour
- 10 fresh yeast
- 50 g sugar
- 80 ml lukewarm milk
- 1 tsp lemon zest
- 40 g melted butter
- 600 g plums

- 2 tbsp breadcrumbs
- 1 pinch cinnamon powder
Instructions
- 1. Sift the flour into a large bowl.
- 2. Make a well in the center of the flour.
- 3. Crumble the yeast into the well.
- 4. Add the sugar to the yeast.
- 5. Pour the lukewarm milk into the well.
- 6. Stir the mixture with a fork until the yeast is completely dissolved.
- 7. Add the lemon zest to the mixture.
- 8. Add the melted butter.
- 9. Knead the dough with the dough hook of the stand mixer until it pulls away from the sides of the bowl.
- 10. Cover the bowl with a cloth.
- 11. Let the dough rise in a warm place for about 1 hour, until it has doubled in size.
- 12. Wash the plums under running water.
- 13. Cut the plums open and remove the pits.
- 14. Halve the plum halves.
- 15. Quarter the plum pieces.
- 16. Grease a springform pan well.
- 17. Dust a work surface with flour.
- 18. Roll out the dough on the floured surface.
- 19. The dough should be slightly larger than the springform pan.
- 20. Place the dough into the prepared pan.
- 21. Press a border into the dough.
- 22. Cover the dough.
- 23. Let the dough rest for another 15 minutes.
- 24. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 25. Sprinkle breadcrumbs over the dough.
- 26. Place the plums closely together on the dough.
- 27. Bake the cake in the oven for about 35 minutes.
- 28. Let the cake cool down slightly.
- 29. Sprinkle cinnamon over the cake.
- 30. Serve the cake.
