🍰 Juicy Plum Cake with Yeast Dough

Ingredients
- 3 kg plums
- 42 g yeast
- 200 ml lukewarm milk
- 500 g flour
- 120 g sugar
- 1 egg
- 1 egg yolk
- 10 g salt
- 10 ml rum
- 70 g soft butter
- 1 tsp cinnamon
- 50 g biscuit crumbs
Instructions
- 1. Make a crosswise cut on the top and bottom of each plum.
- 2. Open the fruit along the cuts and remove the pits.
- 3. Dissolve the yeast in the warm milk.
- 4. Sift the flour into a large bowl.
- 5. Add the yeast-milk mixture, 70 grams of sugar, the egg, the egg yolk, salt, rum, and the soft butter to the flour.
- 6. Knead everything into a smooth dough.
- 7. Shape the dough into a ball.
- 8. Lightly dust the ball with flour.
- 9. Let the dough rise in a warm place until it has doubled in size.
- 10. Preheat the oven to 220 degrees.
- 11. Knead the risen dough briefly again.
- 12. Let the dough rest for 10 minutes.
- 13. Line a baking tray with baking paper.
- 14. Roll the dough out to the size of the baking tray.
- 15. Place the dough on the prepared tray.
- 16. Poke the dough base several times with a fork.
- 17. Sprinkle biscuit crumbs evenly over the dough base.
- 18. Arrange the plums cut side up on the dough in a roof tile pattern.
- 19. Mix the remaining sugar with cinnamon.
- 20. Sprinkle the cinnamon-sugar mixture over the fruit.
- 21. Let the cake rise again until it has increased in size by three-quarters.
- 22. Bake the cake for about 35 minutes on the bottom rack.
