Ingredients
- 1 kg plums
- 1 untreated lemon (zest and juice)
- 1 cinnamon stick
- 2 cloves
- 0.5 vanilla pod (seeds)
- 300 g jam sugar (3:1)
Instructions
- 1. Thoroughly wash the plums under running water.
- 2. Cut the plums in half and remove the pits.
- 3. Cut the plum halves into small wedges or cubes.
- 4. Finely grate the peel of one lemon to get the lemon zest.
- 5. Squeeze the juice from the lemon.
- 6. Scrape out the seeds from a vanilla pod.
- 7. Place the plums, lemon zest, lemon juice, cinnamon, vanilla seeds, and sugar into a large bowl.
- 8. Stir the ingredients well until the sugar is distributed.
- 9. Let the mixture stand for two hours to allow the flavors to infuse.
- 10. Transfer the plum mixture into a cooking pot.
- 11. Heat the mixture on the stove until it begins to bubble.
- 12. Let the jam simmer for about four minutes over medium heat.
- 13. Remove any spice pieces (such as cinnamon sticks or vanilla pod fragments) from the hot jam.
- 14. Fill the hot jam into clean, prepared jars.
- 15. Seal the jars tightly with lids.
- 16. Let the jars cool down completely at room temperature.
