  4. 4. Finely grate the peel of one lemon to get the lemon zest.
  5. 5. Squeeze the juice from the lemon.
  6. 6. Scrape out the seeds from a vanilla pod.
  7. 7. Place the plums, lemon zest, lemon juice, cinnamon, vanilla seeds, and sugar into a large bowl.
  8. 8. Stir the ingredients well until the sugar is distributed.
  9. 9. Let the mixture stand for two hours to allow the flavors to infuse.
  10. 10. Transfer the plum mixture into a cooking pot.
  11. 11. Heat the mixture on the stove until it begins to bubble.
  12. 12. Let the jam simmer for about four minutes over medium heat.
  13. 13. Remove any spice pieces (such as cinnamon sticks or vanilla pod fragments) from the hot jam.
  14. 14. Fill the hot jam into clean, prepared jars.
  15. 15. Seal the jars tightly with lids.
  16. 16. Let the jars cool down completely at room temperature.
