  1. 1. Heat a pot with some water and bring it to a boil.
  2. 2. Make small cross-shaped cuts into the skin of the plums.
  3. 3. Pour the boiling water over the plums to loosen the skin.
  4. 4. Immediately plunge the plums into cold water to stop the cooking process.
  5. 5. Peel the loosened skin off the plums.
  6. 6. Halve the plums and remove the pits.
  7. 7. Dice the fruit flesh of the plums into small cubes.
  8. 8. Peel the ginger and grate it finely.
  9. 9. Mix the plum cubes with the grated ginger.
  10. 10. Add the pectin sugar and the cinnamon stick to the fruit mixture.
  11. 11. Cover the bowl and let the mixture steep for about 6 hours.
  12. 12. Bring the mixture to a boil slowly with the cinnamon stick.
  13. 13. Let the jam simmer vigorously for 3 minutes while stirring constantly.
  14. 14. Remove the cinnamon stick from the hot mixture.
  15. 15. Stir the lemon juice into the jam.
  16. 16. Fill the hot jam immediately into prepared, clean jars.
  17. 17. Seal the jars tightly.
  18. 18. Place the sealed jars upside down for 10 minutes.
  19. 19. Turn the jars back over and let them cool down.
  20. 20. Store the finished jam in a cool and dark place.
