  4. 4. Peel the warm potatoes.
  5. 5. Press the hot potatoes through a potato ricer onto a cutting board.
  6. 6. Allow the potato mixture to cool down completely.
  7. 7. Add flour, semolina, butter, 2 tablespoons of sugar, the egg yolk, and a pinch of salt to the cooled potato mixture.
  8. 8. Knead the ingredients quickly into a smooth dough.
  9. 9. Let the dough rest for about 20 minutes.
  10. 10. Wash the plums in the meantime.
  11. 11. Cut the plums open and remove the pits.
  12. 12. Insert a small piece of cube sugar into each plum.
  13. 13. Flour your work surface.
  14. 14. Shape the dough into a roll about 5 cm thick.
  15. 15. Cut the roll into 12 equal pieces.
  16. 16. Flatten each piece slightly.
  17. 17. Place a filled plum in the center of each dough piece.
