🍰 Plum Dumplings with Poppy Seed Butter Sauce

Ingredients
- 60 g ground poppy seeds
- 2 tbsp butter
- 2 tbsp brown sugar
- 0.5 tsp cinnamon
- fine lemon zest (for garnish)
- powdered sugar
- 400 g floury sweet potatoes
- 100 g whole wheat flour
- 2 tbsp semolina
- 1 tbsp soft butter
- 6 tbsp sugar
- 1 egg yolk
- salt
- 12 ripe plums
- 12 pieces cube sugar
Instructions
- 1. Wash the potatoes thoroughly.
- 2. Boil the unpeeled potatoes until tender, which takes about 25 minutes.
- 3. Drain the water and let the potatoes steam dry for a moment.
- 4. Peel the warm potatoes.
- 5. Press the hot potatoes through a potato ricer onto a cutting board.
- 6. Allow the potato mixture to cool down completely.
- 7. Add flour, semolina, butter, 2 tablespoons of sugar, the egg yolk, and a pinch of salt to the cooled potato mixture.
- 8. Knead the ingredients quickly into a smooth dough.
- 9. Let the dough rest for about 20 minutes.
- 10. Wash the plums in the meantime.
- 11. Cut the plums open and remove the pits.
- 12. Insert a small piece of cube sugar into each plum.
- 13. Flour your work surface.
- 14. Shape the dough into a roll about 5 cm thick.
- 15. Cut the roll into 12 equal pieces.
- 16. Flatten each piece slightly.
- 17. Place a filled plum in the center of each dough piece.
- 18. Seal the dough tightly around the plum, ensuring there are no cracks.
- 19. Shape the dumplings into round balls.
- 20. Place the dumplings into boiling water.
- 21. Cook the dumplings for about 20 minutes.
- 22. Gently nudge the dumplings occasionally so they turn.
- 23. Toast the poppy seeds with the sugar in a pan without fat.
- 24. Remove the pan from the heat.
- 25. Stir the butter and cinnamon into the poppy seed mixture.
- 26. Remove the cooked dumplings from the water with a slotted spoon.
- 27. Let the dumplings drain briefly.
- 28. Place the dumplings on plates.
- 29. Pour the poppy seed butter sauce over them.
- 30. Sprinkle the dumplings with powdered sugar and lemon zest.
- 31. Serve the dish.
