🍰 Plum Dumplings

Ingredients
- 400 g potatoes (floury, waxy)
- 100 g flour
- 2 tbsp semolina
- 1 tbsp soft butter
- 1 egg yolk
- 4 tbsp sugar
- salt
- 12 ripe plums
- 12 pieces sugar cubes
- 150 g butter
- 100 g breadcrumbs
- 3 tbsp powdered sugar
Instructions
- 1. Thoroughly clean the potatoes and cook them with the skin for about 25 minutes. Then drain, briefly rinse with cold water, peel, and press them through a potato ricer while the mass is still hot. Let the potato mass cool down afterwards.
- 2. Now mix the flour, semolina, butter, sugar, egg yolk, and a pinch of salt into the potato mass and let the dough rest for another 20 minutes.
- 3. Wash the plums, cut them open, and remove the pit. Instead, place a piece of sugar cube into the opening.
- 4. On a floured surface, shape the potato dough into a roll about 5 cm in diameter. Cut this into 12 equal pieces, press them slightly flat, place a plum on each, and shape into a dumpling.
- 5. Place the dumplings in boiling water and let them simmer for about 20 minutes. Occasionally bump the dumplings so they can turn.
- 6. Heat the butter in a large pan and fry the breadcrumbs in it until golden brown, then set aside.
- 7. Carefully remove the finished dumplings, let them drain, and toss them in the breadcrumb butter. Arrange on plates and serve immediately dusted with powdered sugar.
