🍰 Classic Plum Dumplings with Vanilla Sauce

Ingredients
- 400 g potatoes (floury)
- 100 g flour
- 2 tbsp semolina
- 1 tbsp butter
- 1 egg yolk
- 2 tbsp sugar
- salt
- 12 plums
- 12 pieces sugar cubes
- 150 g butter
- 100 g breadcrumbs
- 3 tbsp powdered sugar
- 250 ml milk
- 250 ml whipping cream
- 1 vanilla pod
- 5 egg yolks
- 100 g sugar
Instructions
- 1. Pour the milk and cream into a pot.
- 2. Open the vanilla pod and scrape out the seeds.
- 3. Add the pod and seeds to the milk and cream mixture.
- 4. Bring the mixture to a boil while stirring.
- 5. Whisk the egg yolks and sugar in a bowl until creamy.
- 6. Slowly stir the hot milk and cream mixture into the egg yolk cream.
- 7. Pour everything back into the pot.
- 8. Heat the sauce over very low heat while stirring constantly.
- 9. Do not let the sauce boil again.
- 10. Strain the vanilla sauce through a fine sieve.
- 11. Let the sauce cool down.
- 12. Sprinkle some sugar on the surface to prevent a skin from forming.
- 13. Wash the potatoes thoroughly.
- 14. Cook the potatoes with the skin on for about 25 minutes.
- 15. Drain the water.
- 16. Rinse the potatoes briefly with ice-cold water.
- 17. Peel the potatoes while they are still hot.
- 18. Press the potatoes through a potato ricer.
- 19. Let the potato mixture cool down completely.
- 20. Add flour, semolina, butter, sugar, egg yolk, and a pinch of salt to the potato mixture.
- 21. Work the ingredients into a homogeneous dough.
- 22. Let the dough rest for 20 minutes.
- 23. Wash the plums.
- 24. Cut the plums in half lengthwise.
- 25. Remove the pits.
- 26. Fill the hollowed-out plums with a piece of sugar cube.
- 27. Flour your work surface.
- 28. Shape the dough into a roll with a diameter of about 5 cm.
- 29. Cut the roll into 12 equal pieces.
- 30. Flatten the dough pieces slightly.
- 31. Place a filled plum in the center of each dough piece.
- 32. Shape the dumplings round and seal them well.
- 33. Put the dumplings into boiling water.
- 34. Cook the dumplings for about 20 minutes.
- 35. Nudge the dumplings occasionally so they turn.
- 36. Melt butter in a large pan.
- 37. Fry the breadcrumbs in the butter until golden brown.
- 38. Remove the breadcrumbs from the pan and set them aside.
- 39. Lift the finished dumplings out of the water.
- 40. Let the dumplings drain briefly.
- 41. Roll the dumplings in the breadcrumb butter.
- 42. Arrange the dumplings on plates.
- 43. Dust the dumplings with powdered sugar.
- 44. Serve the dumplings immediately with the vanilla sauce.
