  2. 2. Open the vanilla pod and scrape out the seeds.
  3. 3. Add the pod and seeds to the milk and cream mixture.
  4. 4. Bring the mixture to a boil while stirring.
  5. 5. Whisk the egg yolks and sugar in a bowl until creamy.
  6. 6. Slowly stir the hot milk and cream mixture into the egg yolk cream.
  7. 7. Pour everything back into the pot.
  8. 8. Heat the sauce over very low heat while stirring constantly.
  9. 9. Do not let the sauce boil again.
  10. 10. Strain the vanilla sauce through a fine sieve.
  11. 11. Let the sauce cool down.
  12. 12. Sprinkle some sugar on the surface to prevent a skin from forming.
  13. 13. Wash the potatoes thoroughly.
  14. 14. Cook the potatoes with the skin on for about 25 minutes.
  15. 15. Drain the water.
  16. 16. Rinse the potatoes briefly with ice-cold water.
  17. 17. Peel the potatoes while they are still hot.
  18. 18. Press the potatoes through a potato ricer.
  19. 19. Let the potato mixture cool down completely.
  20. 20. Add flour, semolina, butter, sugar, egg yolk, and a pinch of salt to the potato mixture.
