🍰 Juicy Plum Crumble Cake

Ingredients
- 400 g flour
- 0.5 cube fresh yeast (21 g)
- 75 g sugar
- 180 ml lukewarm milk
- 1 pinch salt
- 1 egg
- 75 g melted butter
- 500 g plums
- 80 g flour
- 40 g ground almond kernels
- 80 g sugar
- 100 g liquid butter
- 1 pinch cinnamon powder
Instructions
- 1. Sift the flour into a large bowl.
- 2. Make a well in the center of the flour.
- 3. Dissolve the yeast and one tablespoon of sugar in 4 to 5 tablespoons of milk.
- 4. Pour the yeast milk into the well.
- 5. Stir in some flour to form a pre-dough.
- 6. Let the pre-dough rest covered for about 15 minutes.
- 7. Add the remaining milk, salt, egg, and butter.
- 8. Knead the dough until smooth and it pulls away from the sides of the bowl.
- 9. Let the finished dough rise covered for about 45 minutes.
- 10. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 11. Line a baking pan with baking paper.
- 12. Knead the dough vigorously again after it has risen.
- 13. Press the dough flat and place it in the prepared pan.
- 14. Wash the plums thoroughly.
- 15. Pit the plums and cut them in half.
- 16. Place the plums on the dough with the cut side facing up.
- 17. Mix flour, ground almonds, sugar, butter, and cinnamon with your fingers.
- 18. Form small crumbs from the mixture.
- 19. Sprinkle the crumbs evenly over the plums.
- 20. Bake the cake in the oven for about 45 minutes.
- 21. Check for doneness using a wooden skewer.
- 22. Remove the cake from the oven.
- 23. Let the cake cool down completely.
- 24. Cut the cake into pieces.
- 25. Serve the pieces.
