🍰 Juicy Plum Quark Casserole

Ingredients
- 500 g plums
- 1 organic lemon
- 50 g butter
- 75 g maple syrup
- 4 eggs
- 500 g low-fat quark
- 50 g whole grain semolina (spelt or wheat)
- 30 g spelt whole wheat flour (2 tbsp)
- 1 pinch salt
Instructions
- 1. Thoroughly wash the plums under running water.
- 2. Remove the pits from the plums.
- 3. Cut the pitted plums in half.
- 4. Rinse the lemon under very hot water.
- 5. Pat the lemon dry with a kitchen towel.
- 6. Finely grate the zest of the lemon.
- 7. Cut the lemon in half.
- 8. Squeeze the juice from the halved lemon.
- 9. Mix the lemon zest with the butter and maple syrup until a creamy mixture forms.
- 10. Separate the eggs so that you have distinct yolks and whites.
- 11. Stir the egg yolks into the butter cream one by one.
- 12. Let the quark drain well so that no liquid remains.
- 13. Mix the drained quark with the semolina, the flour, and the lemon juice.
- 14. Fold the prepared butter cream into the quark mixture.
- 15. Add a pinch of salt to the egg whites.
- 16. Whip the egg whites until stiff.
- 17. Gently fold the whipped egg whites into the quark-butter mixture.
- 18. Fill half of the quark mixture into the baking dish.
- 19. Smooth the quark mixture in the dish.
- 20. Top the quark layer with half of the plum halves.
- 21. Pour the remaining quark mixture over the plums.
- 22. Top the surface with the remaining plums.
- 23. Preheat the oven.
- 24. Set the oven to 180 °C (or 160 °C with fan, or gas mark 2–3).
- 25. Bake the casserole for approx. 45 minutes.
- 26. Serve the casserole best while still warm.
