🍰 Juicy Plum Muffins with Amaretti

Ingredients
- 150 g flour
- 220 g plums
- 120 g amaretti cookies
- 1 pinch cinnamon
- 3 tsp baking powder
- 100 g yogurt
- 100 g quark
- 2 eggs
- 70 ml oil
Instructions
- 1. Crumble the amaretti cookies roughly by hand or pulse them briefly in a food processor.
- 2. Wash the plums thoroughly and pat them dry with a kitchen towel.
- 3. Remove the pits from the plums and cut the flesh into small cubes.
- 4. Set aside three tablespoons of the amaretti crumbs and keep them aside.
- 5. Mix the remaining amaretti crumbs in a bowl with the flour, cinnamon, and baking powder.
- 6. Gently fold the cubed plums into the dry flour mixture.
- 7. Whisk the yogurt, quark, eggs, and oil in a separate bowl until smooth and homogeneous.
- 8. Pour the liquid mixture quickly into the dry ingredients and stir briefly until just combined.
- 9. Fill the batter into the cups of the muffin tin lined with paper liners.
- 10. Preheat the oven to 180 degrees Celsius with fan setting.
- 11. Bake the muffins for about 25 to 30 minutes in the preheated oven.
- 12. Remove the tin from the oven and let the muffins cool down briefly inside it.
- 13. Take the muffins out of the tin and let them cool completely on a wire rack.
