  1. 1. Pour the flour onto a clean work surface and shape it into a small mound.
  2. 2. Mix the sugar and salt evenly into the flour.
  3. 3. Make a well in the center of the flour mixture.
  4. 4. Cut the cold butter into small cubes.
  5. 5. Distribute the butter cubes around the well.
  6. 6. Place the egg in the center of the well.
  7. 7. Add about 2 to 3 tablespoons of water.
  8. 8. Chop all ingredients roughly with a knife until small crumbs form.
  9. 9. Knead the crumbs quickly with your hands into a smooth dough.
  10. 10. Shape the dough into a ball.
  11. 11. Wrap the dough ball in cling film.
  12. 12. Let the dough rest in the refrigerator for about 30 minutes.
  13. 13. Wash the plums thoroughly under running water.
  14. 14. Remove the pits from the plums.
  15. 15. Place the quark into a separate bowl.
  16. 16. Add the cream cheese.
  17. 17. Add the sugar.
  18. 18. Add a pinch of salt.
  19. 19. Add the cornstarch.
  20. 20. Add the crème fraîche.
  21. 21. Add the grated lemon zest.
  22. 22. Add the egg yolks.
  23. 23. Mix all filling ingredients well together.
  24. 24. Grease the baking tray thoroughly with fat.
  25. 25. Lightly dust a work surface with flour.
  26. 26. Roll out the dough thinly.
  27. 27. Place the dough on the prepared baking tray.
  28. 28. Press a small edge up at the rim of the tray.
  29. 29. Spread the quark mixture evenly over the dough.
  30. 30. Arrange the plums evenly on the cake.
  31. 31. Preheat the oven to 180°C (fan or top/bottom heat).
  32. 32. Slide the tray onto the middle rack.
  33. 33. Bake the cake for about 40 minutes.
  34. 34. Take the cake out of the oven.
  35. 35. Dust the finished cake with powdered sugar.
  36. 36. Cut the cake into pieces.
  37. 37. Serve the cake with whipped cream.
