🍰 Plum Cheesecake from the Sheet

Ingredients
- 400 g flour
- 200 g butter
- 2 tbsp sugar
- 1 pinch salt
- 1 egg
- 1.5 kg plums
- 300 g quark
- 200 g cream cheese (0.2% fat)
- 125 g sugar
- 1 pinch salt
- 60 g potato starch
- 125 g crème légère
- 2 tsp lemon zest
- 5 egg yolks
- powdered sugar
- butter (for the pan)
Instructions
- 1. Pour the flour onto a clean work surface and shape it into a small mound.
- 2. Mix the sugar and salt evenly into the flour.
- 3. Make a well in the center of the flour mixture.
- 4. Cut the cold butter into small cubes.
- 5. Distribute the butter cubes around the well.
- 6. Place the egg in the center of the well.
- 7. Add about 2 to 3 tablespoons of water.
- 8. Chop all ingredients roughly with a knife until small crumbs form.
- 9. Knead the crumbs quickly with your hands into a smooth dough.
- 10. Shape the dough into a ball.
- 11. Wrap the dough ball in cling film.
- 12. Let the dough rest in the refrigerator for about 30 minutes.
- 13. Wash the plums thoroughly under running water.
- 14. Remove the pits from the plums.
- 15. Place the quark into a separate bowl.
- 16. Add the cream cheese.
- 17. Add the sugar.
- 18. Add a pinch of salt.
- 19. Add the cornstarch.
- 20. Add the crème fraîche.
- 21. Add the grated lemon zest.
- 22. Add the egg yolks.
- 23. Mix all filling ingredients well together.
- 24. Grease the baking tray thoroughly with fat.
- 25. Lightly dust a work surface with flour.
- 26. Roll out the dough thinly.
- 27. Place the dough on the prepared baking tray.
- 28. Press a small edge up at the rim of the tray.
- 29. Spread the quark mixture evenly over the dough.
- 30. Arrange the plums evenly on the cake.
- 31. Preheat the oven to 180°C (fan or top/bottom heat).
- 32. Slide the tray onto the middle rack.
- 33. Bake the cake for about 40 minutes.
- 34. Take the cake out of the oven.
- 35. Dust the finished cake with powdered sugar.
- 36. Cut the cake into pieces.
- 37. Serve the cake with whipped cream.
