🍽️ Green and Spicy Salsa with Tortillas

Ingredients

- 1 red onion
- 2 green jalapeños

Instructions
- 1. Thoroughly wash the tomatoes under running water.
- 2. Remove the stem area from the tomatoes.
- 3. Blanch the tomatoes briefly in hot water (cook briefly in boiling water).
- 4. Immediately cool the tomatoes in cold water to stop the cooking process.
- 5. Peel the cooled tomatoes.
- 6. Cut the peeled tomatoes into coarse pieces.
- 7. Puree the tomato pieces until smooth.
- 8. Peel the onion.
- 9. Dice the onion finely.
- 10. Wash the jalapeños.
- 11. Cut the jalapeños lengthwise.
- 12. Remove the seeds from the jalapeños.
- 13. Dice the deseeded jalapeños finely.
- 14. Finely chop the cilantro leaves.
- 15. Mix the pureed tomatoes with the diced onion, jalapeños, and cilantro.
- 16. Season the mixture with lemon juice.
- 17. Add a little sugar.
- 18. Finally, salt the salsa to taste.
- 19. Wash the tomatoes for the spicy salsa.
- 20. Remove the stem area from these tomatoes.
- 21. Pour hot water over the tomatoes.
- 22. Cool the tomatoes in cold water.
- 23. Peel the cooled tomatoes.
- 24. Dice the peeled tomatoes coarsely.
- 25. Peel the onion for the spicy salsa.
- 26. Peel the garlic clove.
- 27. Dice the onion and garlic finely.
- 28. Wash the jalapeños for the spicy salsa.
- 29. Halve the jalapeños.
- 30. Remove the seeds from the jalapeños.
- 31. Dice the deseeded jalapeños finely.
- 32. Heat oil in a pan.
- 33. Sauté the diced onion and garlic briefly in the hot oil.
- 34. Add the diced tomatoes to the pan.
- 35. Add the diced jalapeños to the pan.
- 36. Let the mixture simmer for about 10 minutes until slightly thickened.
- 37. Season the spicy salsa with lemon juice.
- 38. Add a little sugar.
- 39. Salt the salsa to taste.
- 40. Let the spicy salsa cool down.
- 41. Plate both salsas.
- 42. Serve the salsas with tortillas.
