  1. 1. Remove the crust from the bread and cut the bread into small cubes.
  2. 2. Add the beaten egg and the milk to the bread cubes and let the mixture rest for a short time.
  3. 3. Finely chop the chives and the spring onions.
  4. 4. Dice the cheese into small pieces.
  5. 5. Add the chives, spring onions, cheese, salt, and flour to the bread mixture.
  6. 6. Mix all ingredients thoroughly.
  7. 7. Shape the mixture into dumplings.
  8. 8. Cook the dumplings in gently simmering salted water for approx. 20 minutes.
  9. 9. Wash the spinach and remove any bad leaves.
  10. 10. Cook the spinach in a little boiling salted water briefly until it wilts.
  11. 11. Drain the spinach and shock it with cold water.
  12. 12. Let the spinach drain and squeeze it lightly.
  13. 13. Chop the spinach roughly.
  14. 14. Cut the onion finely.
  15. 15. Sauté the spinach and onion in hot butter.
  16. 16. Season the mixture with salt, pepper, and nutmeg.
  17. 17. Cut the rolls into small pieces and soak them in milk.
  18. 18. Mix the soaked rolls with the beaten eggs and the sautéed spinach.
  19. 19. Season the filling with salt and pepper.
  20. 20. If the dough is too soft, add some more breadcrumbs.
  21. 21. Add flour and mix it in.
  22. 22. Shape the mixture into dumplings.
  23. 23. Cook the dumplings in gently simmering salted water for approx. 20 minutes.
