🍽️ Dumplings with Cheese and Spinach

Ingredients
- 200 g white bread
- 100 g Gorgonzola
- 2 tbsp chives
- 3 spring onions
- 1 egg
- 6 buckwheat flour
- 3 wheat flour
- salt
- 0.25 milk
- 300 g spinach
- 3 rolls
- 125 ml milk
- 1 tbsp butter
- 2 eggs
- 0.5 finely chopped onion
- 2 tbsp flour
- salt
- pepper
- nutmeg
- breadcrumbs
Instructions
- 1. Remove the crust from the bread and cut the bread into small cubes.
- 2. Add the beaten egg and the milk to the bread cubes and let the mixture rest for a short time.
- 3. Finely chop the chives and the spring onions.
- 4. Dice the cheese into small pieces.
- 5. Add the chives, spring onions, cheese, salt, and flour to the bread mixture.
- 6. Mix all ingredients thoroughly.
- 7. Shape the mixture into dumplings.
- 8. Cook the dumplings in gently simmering salted water for approx. 20 minutes.
- 9. Wash the spinach and remove any bad leaves.
- 10. Cook the spinach in a little boiling salted water briefly until it wilts.
- 11. Drain the spinach and shock it with cold water.
- 12. Let the spinach drain and squeeze it lightly.
- 13. Chop the spinach roughly.
- 14. Cut the onion finely.
- 15. Sauté the spinach and onion in hot butter.
- 16. Season the mixture with salt, pepper, and nutmeg.
- 17. Cut the rolls into small pieces and soak them in milk.
- 18. Mix the soaked rolls with the beaten eggs and the sautéed spinach.
- 19. Season the filling with salt and pepper.
- 20. If the dough is too soft, add some more breadcrumbs.
- 21. Add flour and mix it in.
- 22. Shape the mixture into dumplings.
- 23. Cook the dumplings in gently simmering salted water for approx. 20 minutes.
