  1. 1. Rinse the zander fillet thoroughly, pat dry with a kitchen towel, and cut into flat, wide pieces. Heat the olive oil in a pan and fry the fish for about 1 minute on each side. Then remove from the pan, season, and let cool.
  2. 2. Peel the mango, separate the flesh from the pit, and cut into strips. Wash the spinach thoroughly and spin dry in a salad spinner.
  3. 3. Lay out the wheat tortillas on the work surface, spread with sour cream, and cover with spinach. Fill 4 tortillas with zander and mango, and top the remaining ones with smoked salmon. Roll the tortillas tightly and cut in half to serve.
