  1. 1. Peel the shallots and dice them finely.
  2. 2. Clean the mushrooms and slice them thinly.
  3. 3. Cut the meat into small, matchstick-sized pieces.
  4. 4. Heat ghee in a heavy pan.
  5. 5. Fry the meat in batches for 3 minutes.
  6. 6. Remove the meat from the pan and keep it warm.
  7. 7. Season the meat with salt and pepper.
  8. 8. Melt butter in the pan.
  9. 9. Fry the shallots and mushrooms until the liquid has evaporated.
  10. 10. Deglaze with wine and bring to a brief boil.
  11. 11. Add broth and cream.
  12. 12. Simmer the sauce covered for 5 minutes.
  13. 13. Dissolve starch in a little water.
  14. 14. Thicken the sauce with the starch solution.
  15. 15. Wash the parsley and pat it dry.
  16. 16. Finely chop the parsley.
  17. 17. Add the meat to the sauce.
  18. 18. Warm the meat over low heat for 5 minutes.
  19. 19. Stir in the parsley.
  20. 20. Plate the dish and serve with Rösti.
