🍽️ Zurich Sliced Meat

Ingredients
- 600 g veal
- 250 g mushrooms
- 2 shallots
- 2 tbsp clarified butter
- 100 ml white wine
- 200 g whipping cream
- 100 ml veal stock (from the jar)
- 1 tsp cornstarch
- 1 bunch parsley
Instructions
- 1. Peel the shallots and dice them finely.
- 2. Clean the mushrooms and slice them thinly.
- 3. Cut the meat into small, matchstick-sized pieces.
- 4. Heat ghee in a heavy pan.
- 5. Fry the meat in batches for 3 minutes.
- 6. Remove the meat from the pan and keep it warm.
- 7. Season the meat with salt and pepper.
- 8. Melt butter in the pan.
- 9. Fry the shallots and mushrooms until the liquid has evaporated.
- 10. Deglaze with wine and bring to a brief boil.
- 11. Add broth and cream.
- 12. Simmer the sauce covered for 5 minutes.
- 13. Dissolve starch in a little water.
- 14. Thicken the sauce with the starch solution.
- 15. Wash the parsley and pat it dry.
- 16. Finely chop the parsley.
- 17. Add the meat to the sauce.
- 18. Warm the meat over low heat for 5 minutes.
- 19. Stir in the parsley.
- 20. Plate the dish and serve with Rösti.
