  1. 1. Peel the shallots and cut them into fine cubes.
  2. 2. Cut the meat into strips about half a centimeter thick.
  3. 3. Coat the meat with starch.
  4. 4. Slice the mushrooms thinly.
  5. 5. Heat oil in a pan.
  6. 6. Fry the meat and mushrooms separately in hot oil until seared.
  7. 7. Season the meat and mushrooms with salt and pepper.
  8. 8. Remove the meat and mushrooms from the pan and keep them warm.
  9. 9. Pour off the fat from the pan.
  10. 10. Melt fresh butter in the pan.
  11. 11. Sauté the shallots in the butter until soft.
  12. 12. Deglaze the mixture with wine.
  13. 13. Boil the liquid down by about half.
  14. 14. Add the cream.
  15. 15. Cook the sauce until creamy.
  16. 16. Season the sauce with lemon juice, salt, and pepper.
  17. 17. Return the meat and mushrooms to the sauce.
  18. 18. Warm the dish through briefly.
  19. 19. Serve the dish garnished with fresh herb leaves.
