🍽️ Zurich Sliced Veal

Ingredients
- 800 g veal (from the leg)
- 200 g mushrooms
- 1 tsp cornstarch
- 2 tbsp oil
- salt
- pepper
- 2 tbsp butter
- 2 shallots
- 250 ml white wine
- 200 g whipping cream
- lemon juice
Instructions
- 1. Peel the shallots and cut them into fine cubes.
- 2. Cut the meat into strips about half a centimeter thick.
- 3. Coat the meat with starch.
- 4. Slice the mushrooms thinly.
- 5. Heat oil in a pan.
- 6. Fry the meat and mushrooms separately in hot oil until seared.
- 7. Season the meat and mushrooms with salt and pepper.
- 8. Remove the meat and mushrooms from the pan and keep them warm.
- 9. Pour off the fat from the pan.
- 10. Melt fresh butter in the pan.
- 11. Sauté the shallots in the butter until soft.
- 12. Deglaze the mixture with wine.
- 13. Boil the liquid down by about half.
- 14. Add the cream.
- 15. Cook the sauce until creamy.
- 16. Season the sauce with lemon juice, salt, and pepper.
- 17. Return the meat and mushrooms to the sauce.
- 18. Warm the dish through briefly.
- 19. Serve the dish garnished with fresh herb leaves.
