🍽️ Crispy Pea and Snow Pea Salad with Goat Cheese and Ham

Ingredients
- 400 g snow peas
- 400 g pea pods
- salt
- 1 clove of garlic
- 4 tbsp olive oil
- 3 tbsp sherry vinegar
- 1 tsp sugar
- pepper (coarsely ground)
- 200 g goat cheese (or sheep's milk cheese)
- 200 g serrano ham
- parsley (for garnish)
Instructions
- 1. Wash the snow peas thoroughly and remove any tough strings.
- 2. Carefully remove the peas from their pods.
- 3. Bring a large pot of salted water to a boil.
- 4. Add the snow peas and peas to the boiling water.
- 5. Cook the vegetables for 1 to 2 minutes until they are tender-crisp.
- 6. Drain the vegetables and rinse them immediately with cold water to stop the cooking process.
- 7. Let the vegetables drain well.
- 8. Peel the garlic clove and chop it finely.
- 9. Whisk the chopped garlic in a bowl with olive oil, sherry vinegar, sugar, a pinch of salt, and pepper.
- 10. Add the drained snow peas and peas to the marinade and mix everything well.
- 11. Divide the marinated salad onto the plates.
- 12. Distribute fresh goat cheese and slices of Serrano ham over the salad.
- 13. Sprinkle the dish with some black pepper.
- 14. Garnish the salad with fresh parsley leaves.
