  3. 3. Add the snow peas to the boiling water.
  4. 4. Blanch them for about 4 minutes (cook briefly in boiling water).
  5. 5. Drain the snow peas.
  6. 6. Rinse them immediately with cold water to stop the cooking process.
  7. 7. Let the water drain off well.
  8. 8. Peel the mangoes.
  9. 9. Carefully cut the flesh away from the pit.
  10. 10. Cut the fruit into thin strips.
  11. 11. Peel the starfruit.
  12. 12. Slice the starfruit into thin rounds.
  13. 13. Wash the spring onions.
  14. 14. Remove the dry ends.
  15. 15. Finely chop the white part of the spring onions.
  16. 16. Cut the green part into thin rings.
  17. 17. Halve the chili peppers lengthwise.
  18. 18. Remove the seeds.
  19. 19. Carefully scrape off the white inner membranes.
  20. 20. Finely chop the chili peppers.
  21. 21. Place vinegar, salt, cayenne pepper, ginger, and chili in a bowl.
  22. 22. Add oil and mustard.
  23. 23. Whisk the ingredients together well.
  24. 24. Stir the finely chopped white parts of the spring onions into the dressing.
  25. 25. Arrange the snow peas, mango strips, and starfruit slices on the plates.
  26. 26. Drizzle the dressing over the salad.
  27. 27. Sprinkle the salad with the spring onion rings.
  28. 28. Serve the salad immediately.
