🍽️ Exotic Snow Pea Salad

Ingredients
- 200 g snow peas
- 2 mangoes
- 2 carambolas
- 2 spring onions
- 1 tsp freshly grated ginger
- 1 red chili pepper
- 4 tbsp fruit vinegar
- 0.5 tsp mustard
- cayenne pepper
- 6 tbsp sunflower oil
Instructions
- 1. Thoroughly rinse the snow peas.
- 2. Bring a pot of salted water to a boil.
- 3. Add the snow peas to the boiling water.
- 4. Blanch them for about 4 minutes (cook briefly in boiling water).
- 5. Drain the snow peas.
- 6. Rinse them immediately with cold water to stop the cooking process.
- 7. Let the water drain off well.
- 8. Peel the mangoes.
- 9. Carefully cut the flesh away from the pit.
- 10. Cut the fruit into thin strips.
- 11. Peel the starfruit.
- 12. Slice the starfruit into thin rounds.
- 13. Wash the spring onions.
- 14. Remove the dry ends.
- 15. Finely chop the white part of the spring onions.
- 16. Cut the green part into thin rings.
- 17. Halve the chili peppers lengthwise.
- 18. Remove the seeds.
- 19. Carefully scrape off the white inner membranes.
- 20. Finely chop the chili peppers.
- 21. Place vinegar, salt, cayenne pepper, ginger, and chili in a bowl.
- 22. Add oil and mustard.
- 23. Whisk the ingredients together well.
- 24. Stir the finely chopped white parts of the spring onions into the dressing.
- 25. Arrange the snow peas, mango strips, and starfruit slices on the plates.
- 26. Drizzle the dressing over the salad.
- 27. Sprinkle the salad with the spring onion rings.
- 28. Serve the salad immediately.
