🍽️ Veal Liver with Snow Peas

Ingredients
- 600 g snow peas
- 1 onion
- 1 clove garlic
- 1 tbsp butter
- salt
- pepper from the mill
- a little sugar
- 600 g veal liver (4 slices)
- 2 tbsp flour
- 2 tbsp olive oil
- Marsala
- 1 tsp chopped parsley
Instructions
- 1. Thoroughly wash the snow peas.
- 2. Remove the tough ends and strings from the snow peas.
- 3. Peel the onion.
- 4. Peel the garlic clove.
- 5. Dice the onion into fine cubes.
- 6. Finely chop the garlic.
- 7. Heat the butter in a pan.
- 8. Add the snow peas to the hot pan.
- 9. Close the lid of the pan.
- 10. Simmer the snow peas for about 10 minutes.
- 11. Season the snow peas with salt.
- 12. Season the snow peas with pepper.
- 13. Sprinkle the sugar over the snow peas shortly before the end of the cooking time.
- 14. Wash the veal liver.
- 15. Pat the veal liver dry with kitchen paper.
- 16. Coat the veal liver in flour.
- 17. Shake off excess flour from the veal liver.
- 18. Heat the olive oil in a second pan.
- 19. Fry the veal liver slices for 2 to 3 minutes on one side.
- 20. Fry the veal liver slices for 2 to 3 minutes on the other side.
- 21. Remove the fried liver slices from the pan.
- 22. Add the onion cubes to the pan.
- 23. Add the chopped garlic to the pan.
- 24. Sauté the onions and garlic briefly.
- 25. Deglaze the pan juices with Marsala wine.
- 26. Slice the veal liver.
- 27. Serve the liver slices together with the snow peas and the sauce from the pan.
- 28. Sprinkle the chopped parsley over the snow peas.
