🍽️ Fresh Zucchini Summer Salad

Ingredients
- 2 Zucchini (green and yellow)
- 3 Nectarines
- 200 g fresh Sweet Cherry
- 1 Handful Mint
- 1 red Chili Pepper
- 4 tbsp Orange Juice
- 2 tbsp Raspberry Vinegar
- 2 tbsp White Wine Vinegar
- 4 tbsp Rapeseed Oil
- 1 tsp Maple Syrup
- Salt
- white Pepper
Instructions
- 1. Thoroughly wash the zucchini under running water.
- 2. Cut off the hard ends of the zucchini.
- 3. Slice the zucchini lengthwise into very thin slices.
- 4. Rinse the nectarines.
- 5. Halve the nectarines.
- 6. Remove the pits from the nectarine halves.
- 7. Cut the nectarines into wedges.
- 8. Wash the cherries.
- 9. Halve the cherries.
- 10. Pit the halved cherries.
- 11. Rinse the mint briefly under water.
- 12. Dry the mint with a kitchen towel.
- 13. Pluck the mint leaves from the stems.
- 14. Rinse the chili peppers.
- 15. Cut the chili peppers lengthwise.
- 16. Remove the seeds from the chili peppers.
- 17. Slice the chili peppers into rings.
- 18. Whisk the orange juice, raspberry vinegar, and white wine vinegar together in a bowl.
- 19. Add the oil, maple syrup, salt, and pepper to the bowl.
- 20. Whisk the ingredients for the dressing well together.
- 21. Taste the dressing and adjust to your liking.
- 22. Arrange the zucchini slices on the plates.
- 23. Distribute the nectarines and cherries over the salad.
- 24. Sprinkle the chili rings and mint leaves over it.
- 25. Drizzle the salad with the dressing.
- 26. Serve the salad immediately.
