  1. 1. Thoroughly wash the zucchini under running water.
  2. 2. Cut off the hard ends of the zucchini.
  3. 3. Slice the zucchini lengthwise into thin, fine slices.
  4. 4. Cut these slices crosswise into fine strips.
  5. 5. Thoroughly wash the salad greens.
  6. 6. Let the salad drain well.
  7. 7. Peel the onion.
  8. 8. Halve the onion.
  9. 9. Slice the onion into fine rings.
  10. 10. Rinse the chili pepper.
  11. 11. Cut the chili pepper lengthwise.
  12. 12. Remove the seeds from the chili pepper.
  13. 13. Scrape off the white inner membrane of the chili.
  14. 14. Dice the chili finely.
  15. 15. Add vinegar, lemon juice, broth, soy sauce, salt, and pepper to a bowl.
  16. 16. Add the oil.
  17. 17. Mix the dressing ingredients well.
  18. 18. Wash the coriander (cilantro).
  19. 19. Dry the coriander by patting it with a cloth.
  20. 20. Finely chop the coriander.
  21. 21. Stir the coriander into the dressing mixture.
  22. 22. Pour the dressing over the zucchini salad.
  23. 23. Toss the salad well with the dressing.
  24. 24. Rinse the shrimp.
  25. 25. Pat the shrimp dry.
  26. 26. Gently fold the shrimp into the salad.
  27. 27. Serve the salad with white bread.
