🍽️ Zucchini Rolls with Tomato and Mozzarella Filling

Ingredients
- 2 Zucchini
- Sea salt
- Pepper (from the mill)
- 4 tbsp Olive oil
- 3 Tomatoes
- 200 g Mozzarella
- 2 tbsp Sour cream
- 2 tbsp Freshly chopped Basil
- Cayenne pepper
- Lemon juice
- 2 tbsp White balsamic vinegar
Instructions
- 1. Wash the zucchini thoroughly and slice it lengthwise into rounds about 3 millimeters thick.
- 2. Season the zucchini slices with salt and pepper.
- 3. Heat 2 tablespoons of oil in a pan and fry the zucchini slices for about 1 minute per side.
- 4. Place the fried zucchini slices on kitchen paper to absorb excess oil.
- 5. Wash the tomatoes, cut them into quarters, and remove the core.
- 6. Dice the cored tomatoes into small pieces.
- 7. Dice the mozzarella into small pieces as well.
- 8. Mix the diced tomatoes and mozzarella in a bowl with the sour cream and basil.
- 9. Season the filling to taste with salt, cayenne pepper, and lemon juice.
- 10. Place a spoonful of the filling onto each zucchini slice.
- 11. Roll up the zucchini slices tightly with the filling.
- 12. Secure the rolls with toothpicks to keep them from unrolling.
- 13. Arrange the rolls on a platter or plates.
- 14. Drizzle the arranged rolls with the remaining olive oil and balsamic vinegar.
- 15. Serve the zucchini rolls immediately.
