  1. 1. Wash the zucchini thoroughly and slice it lengthwise into rounds about 3 millimeters thick.
  2. 2. Season the zucchini slices with salt and pepper.
  3. 3. Heat 2 tablespoons of oil in a pan and fry the zucchini slices for about 1 minute per side.
  4. 4. Place the fried zucchini slices on kitchen paper to absorb excess oil.
  5. 5. Wash the tomatoes, cut them into quarters, and remove the core.
  6. 6. Dice the cored tomatoes into small pieces.
  7. 7. Dice the mozzarella into small pieces as well.
  8. 8. Mix the diced tomatoes and mozzarella in a bowl with the sour cream and basil.
  9. 9. Season the filling to taste with salt, cayenne pepper, and lemon juice.
  10. 10. Place a spoonful of the filling onto each zucchini slice.
  11. 11. Roll up the zucchini slices tightly with the filling.
  12. 12. Secure the rolls with toothpicks to keep them from unrolling.
  13. 13. Arrange the rolls on a platter or plates.
  14. 14. Drizzle the arranged rolls with the remaining olive oil and balsamic vinegar.
  15. 15. Serve the zucchini rolls immediately.
