  1. 1. Slice the zucchini lengthwise into thin slices.
  2. 2. Mix flour, salt, pepper, and thyme in a bowl.
  3. 3. Coat the zucchini slices in the spice mixture until evenly covered.
  4. 4. Heat oil in a frying pan.
  5. 5. Fry the zucchini slices in the hot oil until golden yellow.
  6. 6. Place the fried slices on kitchen paper to absorb excess fat.
  7. 7. Crumble the feta cheese by hand.
  8. 8. Remove the seeds from the bell pepper and clean it from the white inner walls.
  9. 9. Cut the bell pepper into very fine cubes.
  10. 10. Finely chop the shallot.
  11. 11. Press the garlic through a press.
  12. 12. Mix the crumbled feta, bell pepper cubes, shallots, garlic, and herbs in a bowl.
  13. 13. Add cream gradually.
  14. 14. Stir until a spreadable cream forms.
  15. 15. Spread the cheese cream onto the cooled zucchini slices.
  16. 16. Roll up the zucchini slices tightly.
  17. 17. Secure the rolls with toothpicks so they do not open.
