🍽️ Stuffed Zucchini Rolls

Ingredients
- 2 Zucchini
- 2 tbsp flour
- salt
- pepper (from the mill)
- 1 tsp thyme
- 100 ml olive oil
- 200 g feta cheese
- bell peppers (1/2 red and yellow each)
- 1 shallot
- 1 garlic clove
- 1 tsp rosemary
- thyme (1 tsp each)
- oregano (1 tsp each)
- whipping cream
Instructions
- 1. Slice the zucchini lengthwise into thin slices.
- 2. Mix flour, salt, pepper, and thyme in a bowl.
- 3. Coat the zucchini slices in the spice mixture until evenly covered.
- 4. Heat oil in a frying pan.
- 5. Fry the zucchini slices in the hot oil until golden yellow.
- 6. Place the fried slices on kitchen paper to absorb excess fat.
- 7. Crumble the feta cheese by hand.
- 8. Remove the seeds from the bell pepper and clean it from the white inner walls.
- 9. Cut the bell pepper into very fine cubes.
- 10. Finely chop the shallot.
- 11. Press the garlic through a press.
- 12. Mix the crumbled feta, bell pepper cubes, shallots, garlic, and herbs in a bowl.
- 13. Add cream gradually.
- 14. Stir until a spreadable cream forms.
- 15. Spread the cheese cream onto the cooled zucchini slices.
- 16. Roll up the zucchini slices tightly.
- 17. Secure the rolls with toothpicks so they do not open.
