🍽️ Stuffed Zucchini Rolls

Ingredients
- 2 medium zucchini
- 2 tbsp flour
- salt
- pepper (from the mill)
- 1 tsp dried thyme
- 100 ml olive oil
- 200 g feta cheese
- 2 red bell peppers
- 1 shallot
- 1 garlic clove (pressed)
- chives
- 4 chopped garlic cloves
- lemon juice
- olive oil
- 50 g olives
Instructions
- 1. Slice the zucchini lengthwise into thin strips.
- 2. Mix flour, salt, pepper, and thyme in a bowl.
- 3. Coat the zucchini strips evenly in the spice mixture.
- 4. Heat oil in a frying pan.
- 5. Fry the zucchini strips in the hot oil until golden yellow.
- 6. Place the fried strips on kitchen paper to absorb excess fat.
- 7. Crumble the feta cheese into small pieces with your hands.
- 8. Remove the seeds from the bell pepper and cut it into thin strips.
- 9. Finely chop the shallot.
- 10. Press the garlic through a garlic press.
- 11. Mix the crumbled feta with the pepper strips, shallot, garlic, and herbs.
- 12. Spread the filling mixture onto the zucchini strips.
- 13. Roll up the zucchini strips tightly.
- 14. Tie the rolls securely with a strip of chives.
- 15. Arrange the rolls on a serving plate.
- 16. Sprinkle the rolls with chopped garlic.
- 17. Add a dollop of olive oil to the rolls.
- 18. Season everything with freshly ground pepper.
- 19. Drizzle lemon juice over the finished rolls.
- 20. Add a little more olive oil on top.
