  2. 2. Mix flour, salt, pepper, and thyme in a bowl.
  3. 3. Coat the zucchini strips evenly in the spice mixture.
  4. 4. Heat oil in a frying pan.
  5. 5. Fry the zucchini strips in the hot oil until golden yellow.
  6. 6. Place the fried strips on kitchen paper to absorb excess fat.
  7. 7. Crumble the feta cheese into small pieces with your hands.
  8. 8. Remove the seeds from the bell pepper and cut it into thin strips.
  9. 9. Finely chop the shallot.
  10. 10. Press the garlic through a garlic press.
  11. 11. Mix the crumbled feta with the pepper strips, shallot, garlic, and herbs.
  12. 12. Spread the filling mixture onto the zucchini strips.
  13. 13. Roll up the zucchini strips tightly.
  14. 14. Tie the rolls securely with a strip of chives.
  15. 15. Arrange the rolls on a serving plate.
  16. 16. Sprinkle the rolls with chopped garlic.
  17. 17. Add a dollop of olive oil to the rolls.
  18. 18. Season everything with freshly ground pepper.
  19. 19. Drizzle lemon juice over the finished rolls.
  20. 20. Add a little more olive oil on top.
