🍽️ Zucchini Rolls with Cream Cheese and Mint Filling

Ingredients
- 4 sprigs mint
- 2 zucchini
- salt
- 200 g ricotta
- 0.5 lime (juice and zest)
- pepper (from the mill)
- 1 head lettuce
- mint
Instructions
- 1. Wash the mint and shake it dry.
- 2. Pluck the mint leaves from the stems and chop them finely.
- 3. Wash the zucchini and slice it lengthwise into 2 mm thin slices.
- 4. Bring salted water to a boil and blanch the zucchini slices for 1 to 2 minutes.
- 5. Remove the zucchini from the water and rinse it under cold water.
- 6. Place the zucchini slices on a kitchen towel and let them drain.
- 7. Mix the ricotta with the lime juice, lime zest, and chopped mint.
- 8. Season the filling with salt and pepper to taste.
- 9. Place one teaspoon of the filling onto each zucchini slice.
- 10. Spread the filling evenly over the slice.
- 11. Roll up the zucchini slice tightly.
- 12. Secure the roll with a toothpick.
- 13. Separate the leaves from the head lettuce.
- 14. Wash the lettuce leaves and spin them dry.
- 15. Tear the lettuce leaves into bite-sized pieces.
- 16. Place the lettuce on a plate.
- 17. Arrange the zucchini rolls on the lettuce.
- 18. Sprinkle the rolls with some pepper.
- 19. Garnish the dish with fresh mint.
- 20. Serve the zucchini rolls immediately.
