  2. 2. Pluck the mint leaves from the stems and chop them finely.
  3. 3. Wash the zucchini and slice it lengthwise into 2 mm thin slices.
  4. 4. Bring salted water to a boil and blanch the zucchini slices for 1 to 2 minutes.
  5. 5. Remove the zucchini from the water and rinse it under cold water.
  6. 6. Place the zucchini slices on a kitchen towel and let them drain.
  7. 7. Mix the ricotta with the lime juice, lime zest, and chopped mint.
  8. 8. Season the filling with salt and pepper to taste.
  9. 9. Place one teaspoon of the filling onto each zucchini slice.
  10. 10. Spread the filling evenly over the slice.
  11. 11. Roll up the zucchini slice tightly.
  12. 12. Secure the roll with a toothpick.
  13. 13. Separate the leaves from the head lettuce.
  14. 14. Wash the lettuce leaves and spin them dry.
  15. 15. Tear the lettuce leaves into bite-sized pieces.
  16. 16. Place the lettuce on a plate.
  17. 17. Arrange the zucchini rolls on the lettuce.
  18. 18. Sprinkle the rolls with some pepper.
  19. 19. Garnish the dish with fresh mint.
