🍽️ Crispy Zucchini Patties with Sweet and Sour Onion Sauce

Ingredients
- 500 g Zucchini
- Salt
- 400 g mostly waxy potatoes
- 1 Egg
- 2 tbsp Flour
- 150 g Feta cheese
- Pepper (from the mill)
- Nutmeg
- 4 tbsp Rapeseed oil (for frying)

Instructions
- 1. Peel the onions and slice them into thin rings.
- 2. Rinse the chili pepper and chop it finely.
- 3. Place the onion rings, chopped chili, raisins, vinegar, red wine, and 100 milliliters of water into a pot.
- 4. Bring the mixture to a boil.
- 5. Stir in the honey, a pinch of salt, the cloves, and the allspice.
- 6. Let the sauce simmer over medium heat for about 20 minutes, stirring occasionally.
- 7. Remove the sauce from the heat and let it cool down completely.
- 8. Finally, season the cooled sauce with salt and pepper to taste.
- 9. Wash the zucchini thoroughly and remove the stem end if necessary.
- 10. Grate the zucchini coarsely.
- 11. Sprinkle the grated zucchini with salt and let it stand for about 10 minutes to release moisture.
- 12. Then squeeze the zucchini well to remove the water.
- 13. Peel the potatoes and grate them as well.
- 14. Wrap the grated potatoes in a damp kitchen towel.
- 15. Squeeze the towel tightly to press out the potatoes.
- 16. Let the drained potato juice sit for a short time until the starch has settled at the bottom.
- 17. Carefully pour off the clear water, but keep the starch at the bottom.
- 18. Mix the squeezed zucchini and potatoes in a bowl.
- 19. Add the egg, the flour, and the drained starch.
- 20. Stir everything well until a homogeneous mixture forms.
- 21. Crumble the feta cheese with your hands.
- 22. Gently fold the feta pieces into the zucchini-potato mixture.
- 23. Season the mixture with salt, pepper, and a pinch of ground nutmeg.
- 24. Heat oil in a non-stick frying pan.
- 25. Take small portions of the mixture and place them in the hot pan.
- 26. Press the portions flat to form small patties.
- 27. Fry the patties for about 2 to 3 minutes on one side until golden brown.
- 28. Turn the patties and fry them for another 2 to 3 minutes on the other side until golden brown.
- 29. Repeat this process with the remaining batter in batches.
- 30. Place the finished patties on kitchen paper to absorb excess fat.
- 31. Spread the cooled onion sauce onto small plates or bowls.
- 32. Add the warm zucchini patties and serve the dish immediately.
