🍽️ Crunchy Toast with Savory Zucchini and Tomato Topping

Ingredients
- 4 slices toast bread
- butter
- salt
- pepper (from the mill)
- 1 medium zucchini
- 4 tomatoes
- 2 shallots (finely chopped)
- fresh basil
- 2 tbsp freshly grated parmesan
- 2 tbsp olive oil
Instructions
- 1. Wash the zucchini thoroughly.
- 2. Cut the zucchini in half lengthwise.
- 3. Dice the zucchini halves into small cubes.
- 4. Pour boiling water over the tomatoes briefly to loosen the skin.
- 5. Peel the skin off the tomatoes.
- 6. Cut the tomatoes in half.
- 7. Remove the inside (seeds and pulp) of the tomatoes.
- 8. Dice the tomato halves into small cubes.
- 9. Heat the oil in a pan.
- 10. Sauté the shallots in the pan until they are translucent.
- 11. Add the diced zucchini to the pan.
- 12. Sauté the zucchini for about 1 minute over medium heat.
- 13. Stir the diced tomatoes into the vegetables.
- 14. Sauté the tomatoes only very briefly so they remain slightly firm.
- 15. Season the mixture with salt and pepper.
- 16. Toast the bread until crunchy.
- 17. Spread some butter on the toast slices.
- 18. Top the toast slices with the warm vegetables.
- 19. Sprinkle grated Parmesan cheese over the vegetables.
- 20. Garnish the toast with fresh basil leaves.
- 21. Serve the dish immediately.
