  3. 3. Dice the zucchini halves into small cubes.
  4. 4. Pour boiling water over the tomatoes briefly to loosen the skin.
  5. 5. Peel the skin off the tomatoes.
  6. 6. Cut the tomatoes in half.
  7. 7. Remove the inside (seeds and pulp) of the tomatoes.
  8. 8. Dice the tomato halves into small cubes.
  9. 9. Heat the oil in a pan.
  10. 10. Sauté the shallots in the pan until they are translucent.
  11. 11. Add the diced zucchini to the pan.
  12. 12. Sauté the zucchini for about 1 minute over medium heat.
  13. 13. Stir the diced tomatoes into the vegetables.
  14. 14. Sauté the tomatoes only very briefly so they remain slightly firm.
  15. 15. Season the mixture with salt and pepper.
  16. 16. Toast the bread until crunchy.
  17. 17. Spread some butter on the toast slices.
  18. 18. Top the toast slices with the warm vegetables.
  19. 19. Sprinkle grated Parmesan cheese over the vegetables.
  20. 20. Garnish the toast with fresh basil leaves.
  21. 21. Serve the dish immediately.
