🍽️ Crispy Zucchini with Pine Nuts and Raisins

Ingredients
- 600 g zucchini
- 2 onions
- 4 tbsp olive oil
- 2 tbsp pine nuts
- 2 tbsp raisins
- 1 tsp fennel seeds
- salt
- pepper (from the mill)
- lemons (juice)
- 2 tbsp chopped parsley
Instructions
- 1. Wash the zucchini thoroughly under running water.
- 2. Cut the zucchini in half lengthwise.
- 3. Slice the zucchini halves into rounds about 1 cm thick.
- 4. Peel the onion and chop it finely.
- 5. Heat some oil in a frying pan.
- 6. Add the chopped onion to the hot oil.
- 7. Fry the onion until it is soft and translucent.
- 8. Add the zucchini slices to the pan.
- 9. Fry the zucchini briefly.
- 10. Sprinkle the pine nuts over the zucchini.
- 11. Add the raisins.
- 12. Sprinkle the fennel over the mixture.
- 13. Season the vegetables with salt.
- 14. Season the vegetables with pepper.
- 15. Add some lemon juice.
- 16. Cover the pan.
- 17. Simmer the vegetables over low heat for 5 minutes.
- 18. Remove the finished zucchini from the pan.
- 19. Finely chop the parsley.
- 20. Sprinkle the dish with the parsley.
- 21. Serve the vegetables immediately.
