  1. 1. Wash the zucchini thoroughly and remove the tough ends.
  2. 2. Grate the zucchini coarsely.
  3. 3. Sprinkle the grated zucchini with salt and let it sit for ten minutes to release the water.
  4. 4. Then squeeze the zucchini very well using your hands or a cloth.
  5. 5. Peel the potatoes and grate them as well.
  6. 6. Wrap the grated potatoes in a damp kitchen towel.
  7. 7. Squeeze the towel tightly to remove any remaining moisture from the potatoes.
  8. 8. Let the juice that was released when squeezing the zucchini sit for a short time.
  9. 9. Pour off the clear liquid, but keep the white starch that has settled at the bottom of the bowl.
  10. 10. Add the zucchini, the potatoes, an egg, and the flour to a large bowl.
  11. 11. Mix all ingredients well together.
  12. 12. Season the mixture with salt, pepper, and a pinch of ground nutmeg.
  13. 13. Preheat a non-stick pan with some oil over medium to high heat.
  14. 14. Take small portions of the zucchini mixture and place them in the hot pan.
  15. 15. Press the mounds flat with a spatula to form patties.
  16. 16. Fry the patties for two to three minutes on one side until golden brown.
  17. 17. Carefully turn the patties and fry them for another two to three minutes on the other side.
  18. 18. Repeat this process with the remaining batter until all patties are fried.
  19. 19. Place the finished patties on a plate lined with kitchen paper to absorb excess fat.
  20. 20. Rinse fresh mint under cold water and shake it dry.
  21. 21. Pluck the mint leaves from the stems and chop them finely.
  22. 22. Stir the chopped mint into a bowl with yogurt.
  23. 23. Add some lime juice, salt, and pepper, and then taste the sauce to adjust the seasoning.
  24. 24. Serve the mint yogurt sauce together with the warm zucchini patties.
