🍽️ Crispy Zucchini Cheese Squares

Ingredients
- 200 g filo pastry (or yufka pastry)
- 3 tbsp liquid butter
- 2 zucchini (approx. 800 g)
- 1 sprig mint
- 1 clove garlic
- 200 g cream cheese
- 100 ml whipping cream
- 2 eggs
- 100 g grated cheese (e.g. Pecorino)
- salt
- pepper
Instructions
- 1. Preheat the oven to 180 degrees Celsius fan-forced.
- 2. Line a 20x20 cm baking dish with baking paper.
- 3. Line the bottom of the dish with the pastry sheets.
- 4. Brush each layer of pastry sheets with butter.
- 5. Wash the zucchini and remove the hard ends.
- 6. Grate the zucchini coarsely.
- 7. Rinse the mint under cold water.
- 8. Shake the mint dry.
- 9. Pluck the mint leaves from the stems.
- 10. Finely chop the mint leaves.
- 11. Peel the garlic.
- 12. Finely chop the garlic.
- 13. Stir the cream cheese smooth with the cream.
- 14. Stir the eggs into the cheese-cream mixture.
- 15. Fold the chopped garlic into the mixture.
- 16. Fold the chopped mint into the mixture.
- 17. Fold the grated cheese into the mixture.
- 18. Fold the grated zucchini into the mixture.
- 19. Season the filling with salt.
- 20. Season the filling with pepper.
- 21. Pour the filling into the prepared baking dish.
- 22. Bake the zucchini squares in the oven for about 45 minutes.
- 23. Remove the dish from the oven when the surface is golden brown.
- 24. Let the zucchini squares cool down in the oven or on the stove.
- 25. Cut the cooled squares into small cubes.
- 26. Serve the zucchini squares lukewarm.
